Keto Apple Fritter cookies are low in carbs per cookie. They're a delicious treat for anyone following a Keto diet. We have replaced apples with zucchini because they are high in carbs.

It may sound strange, but the texture of these cookies is nearly identical. This recipe also features cream cheese and cinnamon, which are delicious. They are crispy on the outside, but incredibly chewy and gooey inside.

Preparation

Cookies:

  • 1 cup Almond flour
  • 1 tablespoon Coconut flour
  • 1 teaspoon gum xanthan
  • half teaspoon ground Cinnamon
  • 14 teaspoon Salt
  • 2 tablespoons butter softened
  • 2 tablespoons softened
  • 1/2 cup allulose
  • 1 large egg, room temp
  • 1 teaspoon vanilla extract
  • 100 grams Zucchini, cut into small cubes

Glaze:

  • 3 tablespoons powdered alulose
  • 1/4 teaspoon vanilla extract
  • 1 tablespoon Heavy Cream

The Execution

1. Prepare all ingredients by measuring and preparing them. Pre-heat oven to 325F.

2. Combine almond flour, coconut powder, xanthan, cinnamon and salt in a large mixing bowl. Mix well.

3. Mix allulose and vanilla extract in a separate bowl. Mix well with a mixer.

4. Beat the egg in and add it to the mixture.

5. Mix the flour and water together. Mix well.

6. Add the zucchini slices.

7. Mix well.

8. Line a baking tray with parchment paper. The dough should be rolled into small balls, and the cookies evenly distributed. Place the cookie dough in the oven and bake for 12 minutes, or until it starts to brown.

9. Combine powdered Erythritol with vanilla extract and heavy cream to make the glaze. Combine well by whisking together.

10. Let cool on a cooling rack for 5-10 minutes. Drizzle the glaze.

11. Enjoy and serve!
