Chia seeds are packed with fiber and other nutrients.

Sugar Free Pudding With Chia

My dear friend Deb wanted to have single-serve foods, so I developed this sugar free pudding recipe with chia along with my Chocolate Chip cookie for One.

Deb is on a low carb, high protein diet. She's also looking for fiber to maintain regularity.

We hope you enjoy this low-carb, healthy dessert as much we do.

Keto Chia pudding for One

Prep Time: 5 Minutes
Resting time 4 hours
Total Time: 4 hours, 5 minutes and 15 seconds
Servings One

Equipment

  • Measurement Utensils
  • Pint Mason Jar
  • Cloth Towels

Ingredients

  • 1 1/2 teaspoons organic chia seeds
  • pinch salt
  • 1 a cup water just off the boil
  • 2 tablespoons coconut milk
  • 5 drops vanilla stevia

Instructions

  • Combine chia seeds with salt in one pint Mason jar
  • Place mason jars on a kitchen cloth
  • Pour chia seeds in water and mix with a fork
  • Let the chia-water mix sit at room temp for 4 hours or overnight
  • Add coconut cream and stevia mixture
  • Shake mason jar with lid
  • Serve

Chia water is made by soaking chia seeds with water to bring out the soluble fibre.

To make chia-water, you simply need to sprinkle chia seeds (about a quarter teaspoon) into a glass of water. This is a good way to add soluble fiber to your water, and rehydrate.
