Chicken “Fried” Steak with Cream Gravy

Chicken Fried Steak is a southern American favorite! It is a staple of the Deep South. It's a must-have if you don't have cream gravy. Texas is where I live and I missed Texas chicken-fried steak with cream gravy my first two years of low-carb living. No more longing for that lost love! I have created a low-carb CFS coating and method that gives you a taste of the real thing. My mayo-pork coating for "fries", many vegetables, and chicken has been so successful that I decided to give it another try for chicken fried steak. It worked! This favorite is mine, and I can use it as often as I want!

The first thing I thought of was how to do this. I realized that the beef could lose too much moisture in baking if it was just coated raw. I also had to make sure it was very dry with paper towels. To avoid the pork-rink coating from getting "soggy", I decided to first sear the meat to seal in the juices, before I started the coating process. It was a great decision! It turned out FANTASTIC! The gravy was fantastic, even without any browning. Deglazed from the skillet, the natural caramelized meat juices made a delicious cream gravy that didn't require any flour.

This was served with a sautee of radishes, onion, and steam broccoli. I was distracted by the radishes, and nearly over-browned my meat. It turned out to be a little browner than chicken fried steak. It was still delicious! It can be difficult to time in the kitchen.

This dish can be made with rump roast or round steak, but it will likely turn out a bit tougher. Although they are good cuts, I prefer sirloin or chuck for my CFS. They have a better flavor. Round and rump are not my favorite. If you like pork rinds, this recipe can be used in all phases of Atkins and Keto diets.

INGREDIENTS:

1 lb. 1 lb.

1/3 c. homemade mayonnaise (if commercial mayo, may require more)

1 T. coconut oil or oil of your choice

2 oz. 2 oz.

1/2 tsp. Season with seasonings of your choice. I use my Seafood Spice Mix

1 c. water

1/2 c. heavy cream

1/8 tsp. 1/8 tsp.

DIRECTIONS Chop the pork rinds into small pieces and mix in the spice seasoning. Use a spoon to apply the spice seasoning to the pork rinds.

Remove all gristle and visible fat from the meat's edges. If you are using sirloin or chuck that is very thick, cut it laterally to make pieces approximately 1/2 inch thick. Preheat oven to 425o. To tenderize the meat, cut it into four portions. In a skillet, heat oil and cook the meat until it is lightly browned. DO NOT FORGET THIS STEP. COAT MEAT RAW WITH COATING. I can assure you that your SOGGY RESULTS WILL NOT PLEASE ME. I've been there, done that. Searing the meat first seals in the juices. The meat should not be cooked. You can simply sear the exterior. Take off the heat and use paper towels to remove any moisture.

Use a spoon to pour mayo into a saucer. Hold the HOT meat with one tip using tongs, forks or forks (I use tiny ice bucket-tongs), and coat each piece of meat with mayo. Next, use a spoon to spread the crushed pork rinds on both sides of your meat. The rinds will cover the meat evenly without any excess. You will get good coverage, but not too much.
Chicken “Fried” Steak with Cream Gravy
Spread the coated meat on a METAL baking tray, preferably nonstick. Do not line the meat with silicone sheets or use a glass dish. This will cause it to not crisp properly. Bake for 20 minutes in a preheated oven at 425oF or until golden brown to your preference.

Make your cream gravy while the meat is still cooking. To the skillet where you have seared the meat, add 1 cup water. Then, heat on low heat. Once the meat is cooked, use a spatula to scrape all of the brown bits from the bottom. To reduce the cream and thicken, simmer it over low heat. This will add color and flavor to the gravy. Salt and black pepper can be added to your gravy. You can thicken the gravy by adding a little bit of xanthan gum or a small amount of water.

Serve with gravy on top of meat or as a side dish. You can serve this with any of your favorite vegetable dishes, or a large pile of my Red Radish "Cottage Fries" for a substitute potato. These will make you feel like you are eating real potatoes! This "national" Texas food staple is my hope!

It all depends. It is not possible to have keto-friendly alcoholic drinks. There are some that are more suitable than others. Factors like grain content, sugar levels, and even the type of alcohol will affect whether its consumption affects your daily carb intake or not.

Therefore, you need to choose wisely and understand that just because an alcoholic beverage doesn't have visible carbs doesn't mean it is well aligned with the keto lifestyle - as it might still increase your blood sugar levels. Other factors such as the calorie count should be taken into consideration before making a choice.

Moderation is crucial when you are drinking alcohol on a diet low in carbs to maximize its benefits and avoid any potential drawbacks that could affect your fitness or weight loss goals.
