Introduce yourself.

Kelsey is my name (@carnivore.kelsey) and the carnivore lifestyle has changed my life in a huge way. I enjoy learning about the subject and developing recipes that are within the parameters. My husband has been struggling with health issues over the past 4 years. I've watched him go from looking healthy to nearly dying. The doctors were unable to help and everything they suggested only made things worse. Since January 2019, I have been researching the carnivore lifestyle to determine if it is right for him. We saw that he could thrive without carbohydrates, so I thought why not? It would be easier for me to support him in his new eating style and I have some health issues myself such as migraines. cystic acne. pre-diabetes. exercise induced asthma. Along with some old injuries such as a slipped disc in my lower spine and pain at my base of neck, I still had weight to lose.

2) What did you eat prior to Carnivore?

My eating habits have changed so much throughout my life. My family always followed the Canada Food Guide and demanded fun, processed foods with lots of sugar. I used to sneak junk food whenever I could. When I began to work, I discovered that I could afford my bad habits. I ate whatever I wanted. I worked in coffee shops or bakeries. I loved the unlimited sweet drinks, and discounted treats. They would tell me I would get diabetes, but I didn't listen. We continued to drink and eat out a lot when I moved in with him. It was our first relationship, and we were only a few blocks away from Main Street in Vancouver, which had the best restaurants. This did motivate me to become a better cook and foodie. I was determined to master and cook all of my favorite dishes at least once. Let's say I had many favorite foods. We tried several diets, including Keto and AIP (Auto Immune Paleo Protocol). I tried low carb paleo diet without dairy for about a year before I found carnivore. Carnivore helped with the final 10 pounds I needed to shed. I lost 49 lbs over three years on these diets, but had plateaued. I reversed prediabetes. Don't get me incorrect - I still love fruits and veggies, but I don't think they're worth it anymore. I began the diet with the intention of using it as a tool for elimination, but I haven't felt the need to add anything because I am so pleased with my results. I don't believe in calorie in calorie out, or calculating net carbs. I used to eat too much low-quality dairy when I was on keto. I also tried to recreate all of my favorite desserts using keto recipes, and went overboard. Sweets really mess with me, and I'm not able to compromise. I know carbs are my poison.

Why did you first try Carnivore?

He had eczema and then got gastroenteritis, which I believe started his severe leaky-gut issues. He gradually became allergic to many foods. The dermatologist's advice worsened his eczema and his health spiraled. (His story is more interesting than mine; he has suffered for years, but found incredible improvements on this diet. The progress pictures are all on his instagram account @itchydan. He applied the topical steroids liberally, as instructed. These creams eventually stop working and they spread eczema quickly. Topical steroid withdrawl is a painful and long process that can last up to 3-5 years. It involves constant flare-ups, side effects and cycles. The end seemed far away, and things were still as bad as before. This was our last ditch attempt. We had run out of ideas. Dan wishes he had discovered this way of eating many years earlier as it would have prevented this.

After seeing that so many health professionals advocated this eating style, I did some research. Nina Teicholz's work exposed how corrupt the nutrition science and policies of our government have been in recent years. After comparing the digestive systems between carnivores and humans, I became convinced that we are fighting our own biology. Why haven't we embraced higher fats? We know that low-fat diets are wrong. After learning about Dr Zsofia and the Paleomedicina Clinic's success in healing people with autoimmune diseases with the Paleo Ketogenic Diet, it became clear that we had to do something drastic. The Canadian medical system has failed.

I follow the communities r/carnivore, r/zerocarb and people on Instagram. Carnivore Aurelius' website is great because it covers so much important information, in an easy-to-digest and scientific way. It was inspiring to read about other people's experiences in regaining their health. I never imagined that anyone would approach me and consider me a success. We can't resist sharing the information now that we've seen the positive results. Hopefully, the more people who see it, the better we'll be able to prevent others from suffering.

How do you personally approach a Carnivore Diet?

Dan, my husband, is on a stricter version of the carnivore diet - only meat and water (including non-ruminants such as fish and chicken but mostly beef). It is recommended to start with egg yolks and then move on to whole eggs, dairy products, etc. It is best to stick with basic carnivore until you are able to control your health again. This is the best thing that you can do for yourself. You should do it in a controlled manner and document any negative effects. All we have at the end is our bodies, so prevention is important even if your body doesn't need as much healing.

Currently, I eat: chicken, beef, and pork. I prioritize grassfed/pastured beef (mainly in the form or ground beef and liver, because grassfed cuts can be expensive). White meats are good, but they're not as filling. I eat ruminants every day. I rotate beef cuts, focusing on the fatty ones. If I am eating lean meats I will add extra fat.

I ate a lot of conventional cheese at the start of carnivore and watched my skin heal over several weeks. Then, I switched to a2 milk and ate raw frozen grassfed organs on a regular basis. The liver was very important for healing, as the process accelerated as soon as I started using it. Unfortunately, I discovered that the a2 change didn't do much to help my acne. It's great to tolerate cheese, but I have been denial for a long time and can't. Since cutting out cheese, I've seen significant improvements. I still have butter made from grass-fed cows' milk. I don't believe it will affect me much, but I could cut it out if it seems to be holding me back.

I don't have any cravings. I've never been tempted to cheat, other than to test out if wine and coffee were okay to add. Both did not work. After adopting a more nose to tail eating style with daily broth, I saw incredible results. This combined with intermittent fasting are powerful tools for healing. I am not fully healed, but grassfed liver is a better multivitamin than any other I have tried. Many people claim that you do not need supplements with this diet, but I take ox-bile pills, Great Lakes Collagen Hydrolysate and Green Pasture fermented Cod Liver Oil. Ancestral Supplements organ-meat capsules are great. My skin looked amazing when I took 6 of them a day. However, they're expensive. I have trained myself not to be put off by the taste of liver. I think that marrow and raw frozen liver are important supplements for a carnivore's diet. It's a new thing that I have introduced, but I feel like it quenches my desire for ice cold coconut water.

I am trying to do this within a budget. It is probably cheaper than paying for all the supplements prescribed by Naturopaths and other medical costs. You can do it if you rearrange your finances and never eat out. Just think about your priorities. You can make it more affordable if you do all the cooking, butchering and packaging yourself. Consider a whole bird - you'll save money by buying a whole one rather than chicken breasts, because someone else will have to package and process it. I save a lot of cash with my gadgets like the foodsaver vacuum sealing machine, deep freezer, blender, sodastream, instant pot and sous vide.

What are the benefits you have seen since beginning your Carnivore Diet?

  • 10 lb weight loss
  • On this diet, I spend less time shopping for groceries, planning meals, preparing them, and cooking.
  • Exercise to increase energy
  • I'm happier
  • Reduced migraine attacks. It's easier to detect and prevent migraine attacks now than to wait until they become a full-blown, 1-2 day event.
  • Reduce cystic acne
  • Redness and skin tone are fading away
  • The eczema at the base my skull, which I have had my whole life, is gone
  • They used to flake off and break, but now my nails are strong and grow quickly.
  • Better sleeps, and I can go to bed earlier. I tend to get up around 6 am.
  • Neck and back pain reduced
  • Stable mood, energy
  • I am a disciplined person
  • It is now easier to work out and I feel more powerful
  • Since starting, I haven't experienced an asthma attack due to exercise (but I also do less cardio).

What are the negative effects of a Carnivore Diet?

  • Social stigma
  • It's too expensive to eat out. I pack my lunch and if necessary, I can eat quickly.
  • My old hobbies were unhealthy and revolved around food.
  • Some people say that I should be happy about having to buy a new wardrobe. (LPT - if you are a woman and you are losing weight, you will get more wear out of dresses than you will from pants. Also, you will need lots of yoga pant)

7) Do You Exercise on the Carnivore Diet? If so, how do you go about it?

I now have more time and energy to devote to exercise. I enjoy swimming, yoga, walking in nature, and jogging. I also hear that resistance training is great with this diet, so I am trying to learn how to do it properly. Infrared Yoga is something I've been doing lately.

What advice would you offer to someone who has been considering this diet but isn't ready to make the jump?

Prevention is the key. You should spend some time researching the carnivore lifestyle if you suffer from autoimmune problems. In order to avoid snacking, I do research that inspires me not to poison myself with carbohydrates.

You may experience carbohydrate withdrawal at first. To help you through this, make sure that you have plenty of electrolytes (redmond salt), beef broth and sugar-free bacon. Don't fast early on in your diet. Instead, listen to the signals from your body. They will adjust over time. You are the only person you cheat. You can distract yourself by doing other things to keep you busy so that you won't miss your old eating habits.

9) Do You Think Carnivore Diet Will Ever Be Accepted As A Mainstream Diet?

Yes, it is a strict version of keto. Keto has become mainstream despite the fact that misinformation about this topic was suppressed and lied by various people and corporations. I believe that word-of-mouth and thousands of anecdotal reports can help spread the information once people have seen it themselves. We are facing a serious health crisis. Either we accept that the advice given by government doesn't work, or we continue to be sick. You will only take charge of your own health if you are desperate enough.
