They can be filled with delicious meats and vegetables and customized to your liking. The classic method of cooking skewers over a flame imparts a smoky taste.
This dish combines tender marinated meat with zucchini slices that add a natural sweetness. To take the chicken to the top, give it plenty of time to marinate. It will work for a few hours, but overnight is best to allow the flavors to meld.
Fresh cauliflower rice elevates the chicken and zucchini. Cauliflower rice is low carb, high fiber and absorbs sauces and spices very well. In this recipe, it's a generous mixture of butter and dried herb. Before serving, don't forget the crumbled feta on top of your skewers. This dish will be infused with the Mediterranean flavours of feta cheese, which is a salty and sharp cheese.
Yields four servings of Greek Chicken Skewers and Cauliflower Rice
The Preparation
Chicken Skewers:
- 1/4 cup olive oil
- 1 medium Lemon Juice and zest
- 4 teaspoons chopped
- 1 tablespoon paprika
- 1 tablespoon dried rosemary
- 1 tablespoon Italian seasoning
- salt and pepper
- Cut into 1-inch cubes 24-ounce skinless, boneless chicken thighs
- 2 medium zucchini, cut into 3/4'' inch slices
- feta cheese, garnish
Cauliflower rice:
- 400 grams cauliflower riced
- 4 tablespoons butter
- 1 tablespoon Italian seasoning
- salt and pepper
The Execution
1. Prepare all ingredients. Cut the chicken into cubes between 1 and 1 1/2 inches. Slice the zucchini into pieces that are 3/4 of an inch thick.
2. Combine the olive oil with the lemon juice, zest, garlic minced, paprika and rosemary. Add salt and pepper according to taste.
3. Cover the chicken with plastic wrap and pour the marinade on top. Marinate for at least two hours but preferably over night.
4. Pre-heat the grill to medium high. Alternately skewer the zucchini and chicken.
5. Rotate the skewers 1/4 turn each time you grill. Once finished, the chicken should be fully cooked and charred.
6. Add butter to a medium-high-heat pan and cook the cauliflower rice. Add the cauliflower once the butter has melted and started to bubble. Add Italian seasoning, salt and pepper according to your taste. Stirring frequently will allow moisture from the cauliflower to escape.
7. Serve the skewers with cauliflower when it is soft but still has a bit of bite. Sprinkle the feta over top and enjoy!
