This recipe for single-serving bread was developed in my first or second year of low carbohydrate eating. It's amazing to think that this was 14 years ago. This is very similar to the white bread that we grew up eating, and it has a neutral flavor. Because it's my favorite quick bread, I can bake it in the microwave. But I don't want to make a crust. I just want a sandwich! It makes a great tuna sandwich! Finally, I have found a bread that's not too crumbly or has no flax flavor.
This quick bread is for those who have reached the nuts & seeds level of Atkins OWL carbre-introduction ladder, and Keto fans. This quick bread is not suitable to Primal-Paleo users due to the whey protein.
You can find chia seeds in most grocery stores, Whole Foods and probably Trader Joe's. However, you can also order them online from Netrition.com or most of the on-line pharmacies. To make them less obvious in baked goods and desserts, I grind them in a blender or coffee machine. I also don't like to eat them.
CHIA GEL RECIPE: Combine 1 T. ground Chia with 9 T. water in a small, lidded jar. Cover the jar with a lid and shake it every 3-5 minutes until it starts to gel (about 10 minutes). The gel can be stored in the refrigerator for up to a week so that you can make more bread and chia puddings/shakes.
This bread is best for cold sandwiches as it doesn’t toast as well as other low-carb non-flour breads. While it will brown well and set up nicely for spreading jam or jelly, it won't have the same crunchiness or grain taste that real flour can give when toasted.
It's not going to happen. It's not surprising.
Note: For a larger batch of cookies, bake in a 350o oven. Bake 8 recipes. Place them in a 11 1/2"x16 1/2" steel pan. Line the pan with parchment. Oil the short sides of your pan. The crust will brown faster if it is cooked for 10-11 minutes. The texture and taste were almost identical to those prepared in the microwave. Each slice has 2.93 net carbs and comes in a large batch of 12.
INGREDIENTS:
1 large egg, beaten
1 tsp. 1 tsp. olive oil
1/2 T. chia Gel (made according to the recipe above).
1 1/2 T. water
1/8 tsp. 1/8 tsp. sea salt
2 T. unflavored, unsweetened whey protein powder
1/4 cup almond flour
1/2 tsp. Baking powder
DIRECTIONS Beat the egg, oil, chia gel, and water in a small bowl until smooth. Mix the dry ingredients together with the egg, olive oil, chia gel and water. Stir to combine. Place in a square baking dish at least 1 inch deep. Microwave for 1 minute on High. When it is done, the center will feel dry to the touch. Cook a few more seconds if necessary. Transfer to a cutting board. Let cool for a few minutes. Cut the bread in half lengthwise so that it is as even as possible. Then, cut into two thin slices. Enjoy your white bread any way you like!
