Who eats a hamburger with no fries? Low-carbers can't even eat potatoes! Oh my! What to do?

These were a quick and easy way to start low-carb. The best part is that you don't need to be standing over hot grease. Seafood Spice in the coating removes the sweetness of jicama without overpowering the final fries. This part of the recipe should not be overlooked. This is essential to get the best results. You can substitute other spices or blends if you like. The fries were crispy and the coating browned well. These were loved by even my picky husband, who initially refused to try them. They are Atkins Induction-friendly, too!

Turnip fries are a favorite of low-carbers, but they don't crisp up enough to my liking. Although eggplant fries can be crisp enough, the center of them is too slippery for me to enjoy classic pommes frites (French Fries). Jicama sort of tastes like potatoes........especially when fried hard, so I thought my experiment worthwhile. Many people refer to the Mexican potatoes as Jicama. With great success, I have made jicama potato cakes (latkes), and breakfast hash browns. These are not potatoes substitutes so don't dismiss them. They won't soften in soups if they are simmered. Some people suggest freezing the peeled jicama before adding it to soups. However, I have never tried this myself. As a substitute for potatoes, I prefer to use diced white radish or turnips in soups.

You may feel tempted to use spicy/BBQ pork skins, omitting the seasoning mix. flavored porkrinds can be loaded with sugar, modified food starch and ......not allowed ingredients for low-carbers. Don't let this be a way to ruin your diet. If you aren't convinced, read the label. Low-carbers should read all ingredients labels for processed food packaging. This is the best way to see the whole picture of what you're putting into your mouth. You can't trust the net carb count when it comes down to food. You can't trust the math, but the ingredients will.

INGREDIENTS:

How a Jicama appears

2 T. homemade mayo

2 oz. plain pork rinds, crushed

1/2 tsp. My Seafood Spice Blend

Oil to coat baking pan if not using non-stick sheet pan

DIRECTIONS:

Preheat oven to 450o Place jicama in a bowl. Make sure you brush the mayonnaise well, making sure to not miss any spots. To ensure that the pork rinds adhere to your dish, you need to get a complete coverage. Pulverize the pork rinds using a blender or processor. In a small bowl, combine spice mix with the crushed pork rinds. Drop mayonnaise-coated jicama, a few at a stretch, into the seasoned pork rinds. Give it a good shake to coat. Place directly on an oiled or nonstick baking sheet. Bake for 20 minutes or until the tops are golden brown. They can be turned halfway through baking to ensure even baking. The bottoms will turn out even darker than the tops. Do not bake these on SILICONE SHEETS because they won't brown properly and crisp up on the bottom. This was something I learned the hard way.

Variation: You can substitute turnip for the fries. Turnips are more moist than potatoes so brown them a little more than the recipe suggests.
