The Execution
1. Prepare all ingredients. Season the chicken thighs to your taste with salt and pepper.
2. Add the butter to the Instant Pot and set it on "sauté". Add the celery, onion, carrot and garlic once the butter is melted and bubbling. Saute onions until soft (about 3-4 minutes).
3. Pour the chicken broth into the pot once the aromatics have been cooked. This will deglaze and clean the bottom.
4. Close the Instant Pot, add the dried thyme, bay leaves and chicken. Cook on high manual for 18 minutes.
5. After the timer has finished, let the pressure naturally release for at minimum 5 minutes. Remove the chicken from Instant Pot, and shred it. Set aside.
6. Mix the cream cheese and heavy cream into the instant pot, and break up any cream cheese pieces.
7. If necessary, add the chicken back to the pot. Use the saute function to heat it up. Add salt and pepper to taste. Serve once hot - enjoy!
