Lebanese Baked Chicken (Frarej)

This has been my most popular recipe to date. Hedary's is a great little Lebanese Restaurant in Ft. Worth that our friends from Dallas have taken us to several times. The restaurant has been family-owned for many years. I can attest that their tabouleh and kebabs will make you drool! Frarej, the slow-roasted lemon chicken. They used to serve freshly baked pita bread to tables that were close enough. I don't know if that still happens, but it was very entertaining to watch. Try Hedary's next time you are in Ft. Worth! But in the meantime.......................experience their delicious baked chicken at home! This Induction-friendly version of the ever-popular Lemony Chicken dish has been slightly altered. To keep carbs low, I substitute turnip or rutabaga wedges for the potato wedges in the original recipe. The root vegetables were not included in the nutrition information below because I do not always cook them. I like to use different vegetables depending on what's available. Be sure to add and consume the vegetables you want to over and above the base of tomatoes, onions and garlic. I'd use potato wedges for family members who aren't on Atkins. They soak up the pan juices and are delicious.

It's pretty close to Hedary’s original dish, but I have to admit, it isn't quite as good. The oven does all the work for you! This gives a new meaning to the phrase "Set it and forget it".

INGREDIENTS:

4 T. olive oil

Cut up 1 whole chicken into 8 pieces or 1 piece.

4 oz. onion cut into wedges (separate layers)

2 Roma tomatoes cut into wedges

Garlic, 6-10 cloves (leave the half whole and mince the remainder)

1/2 tsp. Oregano

Juice of one lemon

Salt and pepper in a dash

OPTIONALCarrots or wedges of turnips, rutabaga (for low-carbers), and potatoes wedges

DIRECTIONSPreheat the oven to 500o. Chicken should be cut into 8 separate pieces. I don't use the back of the chicken as I make broth and freeze it for other uses or feed my dogs.

Pour 1 T. olive oil in the bottom of an extremely large baking/roasting dish (I use 12 x 15 stainless-steel metal pan). Glass/ceramicware is not recommended for high-temperature cooking. It is important to invest in a large stainless steel roasting pot if you do not already have one. Place the chicken skin-side up in your pan. Do not overlap or overcrowd the chicken. This recipe does not call for a glass or ceramic dish to be used at such a high temperature. Above 450o, glass can become unpredictable and even break. If you crowd the chicken with the veggies, the pan juices will be deeper around the chicken. This will prevent it from crisping. Place tomato wedges between and around the chicken pieces. Add the garlic and onion pieces. Cut the root vegetables into small pieces and arrange them around the chicken. The lemon juice should be squeezed over the entire pan. Pour the remaining olive oil on top of everything in the pan. Sprinkle oregano lightly over the top (I don't know how much to use, but it should be about 1/4-1/2 tsp). Bake for 30 minutes at 500o. Bake for 20 minutes at 350o, then lower the heat to 350o. If desired, baste with pan juices right before serving. I place the pan juices in a gravy bowl and keep it at the table to bast the breast meat that is drier. If any juices are left over, I freeze them. I then add them to bottom of pan the next time I cook this recipe. This is great with a Tabouleh Parsley Salad.

Keto works to reduce the amount of carbohydrates we consume, and is best when there are 20 grams a day. This forces our bodies into a biochemical process known as nutritional Ketosis. Our bodies use fat as an energy source, instead of sugar and glucose. It might seem hard initially to adhere strictly to this limit of carbs, but it will get easier as you become more comfortable with it.

You should be able to see positive metabolic effects by following the ketogenic diet as long as your nutritional quality is strong and you continue to eat healthy fats such as Omega 3 fatty acid and other beneficial mono/polyunsaturated oils found in avocados and salmon.

When balanced with the proper nutrient intake, keto can be sustained. So make sure you eat whole foods that are in their natural state. Don't underestimate portion sizes! When done properly, keto can be very beneficial to your individual needs. So take some time to find out more and get started before taking big steps backwards or forwards.
