There are some foods I simply do not want to live without. One of those is biscuits and the other is gravy. Blame it all on my roots, folks.

Now, I’ve come to terms with the fact that a true low carb biscuit is just non-existent. Sure, there are replacements but none as true as a real flaky biscuit. In fact, I stopped trying to replicate it because nothing lived up to my expectations.

But, gravy, now that’s a different story! This low carb country gravy is the bees knees! It tastes just like the white sawmill gravy that many of you are accustomed to eating! Dip your chicken fingers, fried pork chops, or even on top off a real biscuit (hey, we can’t be perfect all the time) with this delicious keto white gravy.

If you’re a gravy guru, like most of us Southerners are, I think you’re really going to enjoy this low carb white country gravy!

  • Only a few basic ingredients needed
  • Thick and creamy
  • Doesn’t taste like cheese
  • Great for dipping chicken fingers, fried pork chops, scrambled eggs, etc.
  • Kid approved

How To Make Your Own Keto Low Carb White Country Gravy At Home

Unlike flour-based gravy, this low carb white country gravy does not require a roux (flour, milk, and butter) to get started! In about 10 minutes, you can have a thick and peppery white low carb gravy.

Here’s what you need to get started:

  • Large skillet (non-stick or enameled cast iron works best)
  • Whisk or wooden spoon
  • Liquid measuring cup
  • Measuring spoons

This recipe is all about the skillet. Like any sauce, you’ll cook it nice and slow until everything has melded. The gravy is ready to serve in about ten minutes. This gravy is best served hot (i.e. immediately) so make sure it is the last item you make before serving your meal.

Ways To Serve Your Low Carb White Country Gravy

If you’re not from the South, you may be wondering what purpose gravy has if not on a biscuit. Well darlin’, let me count the ways:

  • On top of scrambled eggs– don’t knock it till ya try it! Not only is this combination keto friendly, it is down right delicious. Don’t forget the bacon!
  • As a dip– chicken nuggets, pork chops, country fried steak, chicken tenders, and anything else you can dream of taste wonderful dipped in gravy. Did you know that Dairy Queen actually serves white gravy with their chicken tenders? It’s a classic combo that everyone must try!
  • With keto cornbread– if you don’t want to splurge on a real biscuit, try this white country gravy on top of one of my keto cornbread muffins. You’ll get the same effect of gravy and bread without the carbs!
  • On pancakes and waffles– give the syrup a break and try a savory (keto) pancake or waffle at your next brunch!

Ingredients and Substitutions

So you really want to make this low carb white country gravy, but you’re missing an ingredient or don’t know what something is? Here is a list of what you can and cannot omit.

  • Bacon grease– this ingredient is on the must include list. The bacon grease helps the gravy from tasting bland and it also helps with the consistency. If you keep solid bacon grease in a jar, just melt it down per the instructions. If you don’t have any bacon grease, you can cook some bacon and reserve the rendered fat. Alternatively, you could use any kid of fat/tallow but be forewarned that the final taste will not be the same.
  • Chicken broth– this ingredient is on the must include list. The chicken broth helps to thin out the gravy to a nice thick but spreadable consistency. It also adds flavor to the gravy. It is not advised to use water in place of broth.
  • Xanthan gum– this ingredient helps to thicken the gravy so that it is not too runny. If you accidentally use too much broth, a bit of xanthan gum can correct that mistake. However, if you do not have xanthan gum, this ingredient may be omitted and still reach a nice consistency.

How To Store Low Carb White Country Gravy

When you’ve had your fill of this delicious country gravy, let it cool to room temperature before storing. If storing in the refrigerator, transfer the cooled gravy to an airtight container and use within three or four days. To reheat, simmer gently over the stove until warmed through.

If you’d like to make this low carb white country gravy last a little but longer, transfer the cooled gravy to a freezer-safe container and use within three to four months. When reheating, defrost in the refrigerator overnight and reheat gently over the stove, or pop it in the microwave for a couple of minutes and stir thoroughly.

Ingredients

  • 1.25 cups heavy whipping cream
  • 8 ounces cream cheese softened and cut in cubes
  • 1.5 tablespoons bacon grease
  • 1 teaspoon pepper
  • 1/2 teaspoon salt
  • 3 tablespoons chicken broth
  • 1/4 teaspoon xanthan gum

Instructions

  • In a large nonstick skillet over medium heat, add bacon grease and let warm up/melt if not already liquified.
  • Add the heavy cream and whisk to fully combine grease and cream.
  • Add the cream cheese cubes and whisk continuously until fully melted and combined.
  • Add the chicken broth, salt, and pepper. Whisk continuously until everything is absorbed and mxed. The mixture should resemble thick white gravy at this point.
  • Add the xanthan gum and whisk for 30 second until combined. Do not cook too long or it will become “glue” like.
  • Serve immediately.

Notes

If the gravy becomes too thick, use chicken broth to thin it back out over low heat. Do not use water or the flavor will become bland.
To reheat, place cold gravy in a skillet over medium low heat until warm and smooth. Add more chicken broth if needed.
Final yield will vary depending on how much extra chicken broth is added. Please calculate yoru own macros for the most accurate nutritional information.
