On our travels we will eventually reach Morocco if we continue to the west along the Mediterranean coast of Africa. This is a country that I have never visited, but I hope to visit one day. Their intricate woodwork, wooden furniture and tile craft are all things I adore. Their cuisine is a mix of Arabic, French, Spanish and Berber cuisines. It is often prepared in a tagine (a medium-sized clay pan). Personally, I have never used one. Below are photos of some beautiful tags.
Based on my limited knowledge of very few recipes, I have only attempted to make a few Moroccan dishes. The spice mixture is very similar in flavor to Baharat spice from other Arab countries. It has paprika, a little spunk and crushed red pepper (the Spanish- and Berber influences). This one is a good choice. It's delicious with all the things I have tested it on. It works well with grilled meats and water-braised dishes. You can add dried fruits to your meat dishes. It was delicious on a grilled fish, which I had the pleasure of trying it once. It is Atkins Induction Phase compatible, as are most spice combinations.
INGREDIENTS:
4 T. Smoked Spanish paprika
4 cinnamon sticks, 3 inches long, chopped up (or 3 T. if you use ground cinnamon).
1/4 - 1/2 tsp. cayenne, depending on taste
3 T. coriander seed
1 teaspoon. Whole cloves (about 1/2 teaspoon). Ground cloves
1 tsp. 1 tsp.
1 T. coarse black pepper
3 T. cumin seeds (whole).
1/2 tsp. turmeric
DIRECTIONS Measure whole seeds/spices in a dry, nonstick skillet. Increase heat to high. Roast spices for a few minutes until they are fragrant. Let cool off the heat. Use a spice grinder, or a coffee grinder that is specifically designed for spice grinding. These tastes can linger for months, creating a really strange tasting coffee ..........
Mix the mixture well. Mix in any UNGROUND spices that you're using instead of whole (whole works best), and then pour the mixture into a jar. As is appropriate for spice storage, store in a dark cabinet.
NUTRITIONAL INFORMATION: Makes approximately 1 cup or 16 Tablespoons. A tablespoon would be enough to make a four-serving braised entree, or to grill fish and meat for four. One tablespoon of the following:
