Pork on “Lotus Leaf”

Sometimes, even in my worst moments, I find myself enamored with a good recipe. Today I was in my back garden and on the iris bed. I was so tired that I fell asleep in my favorite recliner while I watched TV. The hubs woken me up at 5:45 am and asked if I was going to make dinner, or if he would like to order/pick up for us. I had already thawed three small pieces of pork loin, but I wasn't sure what I would cook for dinner. To make a quick and easy meal, I usually whip up a stir fry. When I saw the small, fresh head of cabbage right next to the pork in my refrigerator, this idea came to me. So I made a recipe I had created years ago.

The whole lotus plant can be eaten and used in Chinese medicine. The tubers taste a lot like sweet potatoes, according to them. They also use the blossoms for cooking. The slightly sweet leaves are dried and sold online. They are aromatic when cooked, according to my research. If lotus flowers are growing in your backyard, I encourage you to use the real lotus leaves. As I am not so fortunate, I substitute outer cabbage leaves. It is the same shape and has a nice visual impact on the plate. Cabbage can also be slightly sweetened and tastes great in Chinese cuisine!

This dish is a favorite of ours! Although this dish sounds spicy at first glance, I assure you that it isn't. I don’t like spicy food. You may wish to increase the Sambal Oelek or double the jalapeno. The dish is just a touch hot (as it's written), and that's enough heat for me. This dish is enhanced by a little bit of mashed cauliflower and seasoned with a dash of S Oelek chili sauce.

This recipe can be used for Atkins Phase 2 or beyond, as well as other ketogenic diets. You can also make this delicious concoction for those on Atkins Induction.

INGREDIENTS:

3 T. coconut oil or your favorite oil

9 oz. Pork loin, trimmed and sliced julienne style

3 T. Total dry sherry, or white wine

3 T. total low-sodium soy sauce, tamari or coconut aminos

2 1/2 finely shredded pieces of green cabbage

1/2 cup chopped green onions (I used only the white ends).

1 large jalapeno seeded, chopped

1 tsp. fresh ginger, minced

2 cloves garlic, minced

1/8 tsp. 1/8 tsp. sea salt

Butter-seasoned cauliflower mash, 2 1/4-2 1/2 c

1 tsp. Sambal Oelek chile paste

1/2 small carrot, cut into thin strips.

VARIATION : Use lean beef in place of pork.

DIRECTIONS Combine the julienned pork with 2 T. of sherry and 1 T. soy sauce. Mix the ingredients together with your hands. Let rest for 10 minutes before chopping up the other ingredients.

To soften the cabbage, peel off three outer leaves. Cook the serving leaves for about 4 minutes if you wish to eat them (which we do). Drain the leaves in hot water and place them on a paper towel to dry. Refuse to use water.

Mix the cauliflower mash and the remaining oil in a small skillet. Sambal Olek. When the mixture is well stirred, it will make the cauli pink. While you stir-fry, turn heat up to low and warm.

Heat the coconut oil in a large saucepan. Stir-fry the julienned pork until it starts to brown. Stir-fry the cabbage, green onions, jalapenos, ginger, and garlic in the wok. Mix the ingredients together with the sea salt. Add the pieces of carrot that you have cut with a carrot peeler to the wok and let it cook for a few minutes. Mix in the remaining tablespoon of sherry, and 1 1/2 tablespoons soy sauce.

Spread 1/3 of the pink cauliflower rice onto each leaf of cabbage. Leave the dark edges of the leaves exposed. Next, spoon 1/3 of the meat mixture over the cauli-rice mixture. Serve your family and friends immediately. One of these made me feel like a tick. My husband ate two. I also eat the cabbage leaf or lotus leaf bowls.

Additionally, moderation should be key when drinking alcohol on a low-carb diet to maximize its positive effects while avoiding possible drawbacks that could derail your fitness or weight loss achievements related to this lifestyle change.

Can I eat a vegetarian keto diet?
