Roasted Turkey

Turkey is a North American favorite, and it's not just an American classic food. They love turkey and dressing, which they also enjoy for Canada's Thanksgiving Day celebration in October. Turkey is not a common food in other parts of the world. As a child in Iran, turkey was only something Mom could make at Thanksgiving.

While I bake my turkey in my regular oven because it has a meat thermometer probe built in, I love roasting my holiday turkeys in the oven. This appliance is great for entertaining guests during holidays, since it allows me to bake all the delicious side dishes.

The ovens can also be used to bake cakes, cookies, muffins, and other baked goods. If you have never tried one, Santa might be able to give one to you. You can get one for as low as $29 during holiday season sales. My first one cost $60 in the 60's. At that time, $60 was a lot less than it is today. After an electric mixer, a roaster oven is the most versatile and useful small appliance I have in my kitchen. It can be carried out to the patio and used in summer for cooking.

A roaster oven is just as easy to cook turkey in as a regular oven. Although the lid acts as foil, it can get extremely hot at the top. Important Note: Make sure you buy a bird that will fit in your roaster oven. The lid must reach all the way to the base of the oven.

Because the oven is extremely hot, I cover my bird's wing tips, drumstick knobs, and breast meat with foil. These areas should not be overcooked or dried out.

Roasted turkeys always turn out moist and delicious. They cook better in a roaster oven than they do in my regular oven. Although the skin isn't as crisp, it's crispy enough to allow me to maintain that moist meat.

Turkey can be eaten on all Atkins, Keto and Primal diets. Here is how a Thanksgiving Day dinner at my house looks.

INGREDIENTS:

1 12-13 lb. Turkey, thawed (follow the chart on wrapper to see a larger bird).

4 T. butter melted

Mix each teaspoon of black pepper and salt.

Some small pieces of foil

DIRECTIONS Heat oven to 325o. Open the turkey wrapper. I prefer to take the bird to a clean, cold sink. The leg binding device should be removed. Set aside giblets to make your gravy. I use only the neck meat in my gravy, so I cook it for about an hour with chopped celery and onions. My husband doesn't like the innards so I add them to my dog's kibble for a few more days.

I like to clean the inside of the bird. The exterior is then dried with paper towels. In a small saucepan, melt the butter. Salt and pepper the bird from the inside and outside. Use half of the butter to brush the skin. Place the turkey breast-side up in a large pan that is sturdy enough to support it.

My dressing is cooked outside the bird because I prefer it to be brown on top. If you prefer, you can put some in the cavity of your bird. You can also place chopped celery, onion, and parsley in the cavity to enhance flavor, but I don't recommend it. You can do what you like, but make sure you add the carbs to the bottom of the dish. To prevent them from burning or overcooking, cover the breast meat, leg knuckles, and wing tips with foil.

Bake the pan with the bird for approximately 1 hour. Just lift oven lid enough to brush with butter. Cook bird for one hour in the oven. You can check for doneness by placing a meat thermometer around the thickest portion of the breast, the hip joint (the hidden part of the leg quarter), and the area closest to the turkey's thickest parts. The thermometer should read 170o. Cook the bird for an additional 30 minutes, and then check it with the thermometer once every 10-15 minutes.

When the thermometer registers 170o, remove pan from oven. Allow pan to rest for 10 minutes before you attempt to carve. The resting time will prevent you from tearing the meat while it is being sliced. It will also keep the juices in the meat and not leaking onto your cutting board. Those juices should stay in the meat. For serving, lift the bird onto a cutting board. The turkey should be very moist. A regular oven can also be used to cook this turkey for approximately 2 1/2-3 hours. This will produce a tender and juicy turkey.
