Sausage-Bacon Stuffed Portobello Mushrooms

Yesterday, I bought a lovely package of Portobello cap stuffed with a different stuffing. It sounded delicious because we haven't made any for a long time. I decided to add a few common ingredients for stuffed mushrooms and the combination came out really well. I'm sure you will enjoy these as much we did. Leave out the Sauvignon Blanc Wine if you're still in Atkins Induction Phase.

INGREDIENTS:

2 large 3oz. Portobello mushroom caps (mine had no stems)

2 tsp. Olive oil

Chop 4 thick slices of bacon

I used Johnsonville sweet Italian sausage, casing removed.

Green onion or yellow onion, chopped to 1/4 cup

One low-carb dinner rolls, finely crumbled

Parmesan cheese, 2 T.

1/2 c. shredded mozzarella cheese

2 T. (1 oz.) cream cheese

1/2 tsp. Black pepper, coarse

I used Sauvignon Blanc).

DIRECTIONS Wipe the mushrooms clean with a paper towel or a clean cloth to remove dirt. The black gills can be removed and thrown away. Place the gills up and oil with an olive oil brush. Set aside, and preheat the oven to 350o.

Brown the bacon in a skillet until it is almost crispy. Sausage and cook until sausage is no longer pink. Add the onion and cook for a few minutes, until it is tender. Work the cream cheese with your spoon to melt and blend. Stir well to mix all ingredients. Remove from heat, and spoon evenly into each mushroom cap. Place in 350o oven and bake for 20-30 minutes, or until the top is golden. Serve immediately with low-carb bread, a green vegetable of your choice, or perhaps a nice salad.
