Spicy Cheese Cornbread Loaf

My husband asked me to make a pot with pinto beans, ham and cornbread for dinner tonight. As I do not like carbs, I only had a few boiled eggs and half an avocado for lunch in preparation for tonight's carb-y dinner. I changed up my Jalapeno-Cheese Bread that's been on my site for years. I added a generous amount of cayenne and onion powder, as well as a small amount actual cornmeal. The result was a hit with both of us! This bread will not be suitable until the Maintenance Phase of Atkins as it contains real Cornmeal.

It would also be delicious as muffins. Cooking muffins only takes 15-20 minutes.

It doesn't matter what brand of corn flavoring you use. Select Products (who purchased Superior Flavors, and shut down the online website later. Superior Products' website is still available for me, and I may be able to place orders on some products. The "Fresh Corn", which is available in the Regular Shop of Superior Products, I buy. But you must purchase the 8 oz. bottle. Last time I ordered 6 small bottles OK. If you have no success placing an order at that site, try this corn flavoring (I have not personally tried): https://amoretti.com/products/sweet-corn-extract-ws, try the corn flavoring at Naturesflavors.com (I hear it's good, but I haven't tried it yet, myself).

INGREDIENTS:

Almond flour, 1 1/2 cups

Coconut flour 2 T

Golden flax meal, 1/4 c.

Baking powder 1 T.

1 1/2 c. cheddar cheese (or another hard cheese)

1/4 tsp. cayenne pepper

1 tsp. Granulated onion powder

I use yellow cornmeal, but white is fine too.

5 eggs, beaten

2 T. coconut oil, melted

2 T. olive oil

1 T. cider vinegar

1 T. + 1 tsp. Fresh Corn Flavoring (optional). Source: selectflavors.com

DIRECTIONS Pre-heat oven to 350o. Set aside a loaf pan that has been well greased. Even though I use a non-stick pan, my bread tends to stick to the bottom. This loaf can be cut into 10 thick slices. This recipe works well with both extra-long and regular-sized loaf pans. The larger size will produce a flatter bread; the standard will create a slightly higher loaf.

All dry ingredients, including the cheese, should be measured into a medium-sized measuring bowl. Stir and put aside. Mix all ingredients dry and add cheese. Stir to combine all the liquid ingredients in the mixing bowl. Scrape the batter with a rubber spatula into a greased loaf pan, preferably lined in parchment paper, and place it into a preheated oven. The time will be 40 minutes for a 5x8" pan, but only 30 minutes if you are using a pan that is 4''x12". Check the center of the loaf with a finger to see if it is dry. You can also use a toothpick. Remove from pan and let cool for a few moments before trying to remove & slice. Use a sharp knife to loosen the edges and then gently tip onto a cutting surface. Cut into 10 portions.

This cornbread will make a great "Cornbread Stuffing" for your Thanksgiving turkey.
