Lobster is one of the greatest culinary delights in life, according to me. Only thing that comes close for me would be a grilled-to-perfection 1 1/2" thick ribeye steak. Just thinking about these two dishes makes my mouth water. After Thanksgiving we try to avoid turkey, so I am planning on having lobster as my Christmas dinner. This year, I'm thinking a delicious Lobster Bisque with a green salad and a crusty French Baguette. Perhaps a Broccoli with Caramelized Onion Sauce will be served to go along with the seafood. I am currently considering a layered torte with strawberries. When I am sure that I have chosen the right dessert for us and know how to layer the layers, I will post the recipe. My thoughts are focused on the MRI that my doctor has scheduled for December 24th. It's not my favorite thing, but at the hospital I work, they have been telling me to accept the dates that are given to you. Otherwise, you could be waiting six more weeks for the test (because everything is so overbooked).
Sam's Club usually sells lobster tails from the Bahamas. In my opinion, it tastes sweeter than the cold water lobsters from New England. I actually like this. This recipe can be used for any phase of Atkins.
INGREDIENTS:
1.25 lb. About 12 oz. tail meat after removing shell)
Half a stick of salted butter, melted
DIRECTIONS Place about 1 1/2 cups of water in a large pot, and bring it to a rolling boil. Two skewers should be run from the base up the middle of the belly to the thickest part. This will prevent the tail from curling up during cooking. Insert the skewered tail into the pot when the water is at a rolling boil. I always lean them out of the top. It's okay to have the lid slightly off-center to prevent water from evaporating. Reduce heat to medium and steam for 7-10 min. Remove skewers, hold shell in one hand and, using a kitchen mitt or towel, use kitchen shears to cut straight up the shell, from the top of the tail down. Pull the sides of the tail shell apart, and use a fork to remove the tail meat. (I prefer to keep the tail fins in tact and attached). Spread the tail fins on a serving planner to make a beautiful presentation. VARIATION: I sometimes boil my lobster tails, and I omit the skewer. Before cooking, I cut the back of the lobster tail (the concave arched side) all the way to the tail fan. You will not have to handle them when they are hot.
