Daniel Oliver’s Irish Soda Bread

Happy St Patrick's Day

Dan Oliver, a friend of mine posted the recipe for this St. Patrick's Day favourite and I told Dan that I would use it this year. It turned out wonderfully and was delicious.

Ingredients

3 1/2 cups bread flour
1/2 cup whole wheat flour
1 cup for each bunch of plumped raisins
2 cups whole buttermilk
1 egg beaten
6 tablespoons butter
2 teas [poons salt]
2 teaspoons baking soda
1 teaspoon baking powder
1/3 cup brown sugar packed tightly

Directions

Make biscuits by combining butter and flour. Add dry ingredients to the flour, then add the wet ingredients. Form the dough into a ball using a hand/spatula, or a stand mixer. Flour the dough ball and form it into a circle on floured pastry boards.

Let the cake cool on a parchment or greased pan for five minutes, then cut a cross at the top.

Bake at 400°F for 45-50 minutes.

My Cloche-covered bread pan was used, but you can also use any other baking pan you have. Cover the baking sheet and place it in the oven while it heats up. As directed above, add the dough ball and the coke.

What is a Mediterranean breakfast?

A Mediterranean breakfast would include a combination protein, healthy oil, and carbohydrates. Options can range from eggs cooked in olive oil with a side of roasted vegetables or a salad, Greek yogurt or cheese served with whole-grain toast, or quinoa porridge topped with fresh fruits, nuts, and seeds. Avocado toast with tomatoes is a delicious option for breakfast. You can start your day with Mediterranean-inspired proteins like wild-caught fish, grassfed meat, organic eggs, and nuts. Whole grains such as quinoa, oats, and whole grains are good choices. You can also limit the amount of sugar by choosing fresh fruits, avocados, extra virgin olive oils, olives, and coconut oils. For added antioxidants, you might consider adding green tea to your morning breakfast.


What foods are prohibited on the Mediterranean diet?

Certain food groups are not included in a Mediterranean diet. Certain foods are not recommended to be eaten in order to retain the health-benefits associated with this eating pattern. Even though these items can be part of a healthy eating plan, consistent consumption can negate the potential health benefits.

The Mediterranean diet prohibits whole-grain breads as well as starches, including white bread, sugary cereals, breads made from refined flours, and any other high-processed baked goods. These items are quickly absorbed into your system as sugars and may lead to blood sugar spikes that cause weight gain over time. They are also lacking in vitamins and minerals, compared with whole grain options like millet or Quinoa.

Other forms of sugar also fall into this category. As such, limit your intake soda, tea with additional sugars, and juices. These sweetened drinks won't support weight control or healthy nutrient profiles.

When it comes to meats, red meats and processed meats should not be included in any version of a Mediterranean-style meal plan. Red meats and processed meats possess high levels of saturated fat, which increases cholesterol levels, raising the risk for heart disease and other metabolic syndrome-related problems that could lead to more serious illnesses. Processed lunchmeat products contain nitrates that may increase cancer risks due to their association with cell damage responses throughout the body's cells. Dairy products should also not be consumed regularly as some cheese contains considerable amounts of saturated fats too - except for feta which is low in saturated fat content - otherwise, stick only to skimmed milk or yogurt products when considering dairy options because these will generally be lower in total fat intake than heavy cream or creme fraiche alternatives that contain higher doses of calories in their ingredients listing.

  5. Instead of using traditional oils, use olive oil instead.
  6. Finally, occasionally enjoy a red wine to complete the Mediterranean experience.

It takes time and effort to change your daily meal plan to adopt Mediterranean eating patterns. They can reap potential health benefits while still enjoying the food they eat.
