Italian Pecan Cookie
Ingredients
Butter 1 cup
Three heaping tablespoons powdered sugar
1 teaspoon. vanilla
2 cups of flour
Cold water, 1 tablespoon
1/4 teaspoon of salt
Half a cup of pecans
See below for powdered sugar icing
Multi-Colored Sprinkles
Directions
Pre-heat the oven to 325° F.
In a mixer, cream butter, sugar powder, water and vanilla. Add the flour and salt. Mix flour and salt.
Cover each half of a pecan with a tablespoon of dough, and place them on cookie sheets.
Bake for 30 minutes, or until the cookies are lightly browned. Cool cookies in a rack.
Sprinkle colored sprinkles over the top and frost with powdered sugar.
Powdered sugar Icing
Powdered sugar, 1 cup
Vanilla 1 teaspoon
1 tablespoon of milk
Mix well to create a thin icing.
Italian Wedding Cookies
Ingredients
1 cup softened butter
Half a cup of powdered sugar
Vanilla 1 teaspoon
2 1/4 cups of sifted fl our
1/4 teaspoon of salt
1/4 cup chopped walnuts
Powdered sugar (for rolling baked cookies into)
Directions
Mix butter and powdered sweetener until fluffy. Add vanilla.
Add the flour and salt to the butter mixture, stirring constantly. Stir in the chopped nuts.
If the dough is too soft, chill it.
Place dough in 1-inch-sized balls on parchment-lined baking sheets or ungreased baking sheets.
While cookies are still hot (but not hot), remove them from the baking sheet and roll a few cookies at a time in powdered icing sugar. Cool cookies on wire racks.
Once cookies have reached room temperature, they can be rolled a second round in powdered confectioners' sugar. Cookies can be frozen.
