This recipe for lobster tail uses only oil and butter to add richness, and a few simple aromas that enhance the flavor while letting the lobster shine. You'll need:
- Lobster Tails:Fresh and frozen work equally well. Thaw frozen lobster tails overnight in the fridge. Cold water lobsters, such as those from Maine and New England, tend to be sweeter. However the buttery garlic sauce will make any lobster tails work.
- Extra virgin Olive Oil: Adds flavor to the dish without adding weight. Arbaquina is a mildly buttery oil that I used. I prefer a smooth, rich, medium-bodied olive oil, but any extra virgin olive oils of high quality will do.
- Butter A small quantity of unsalted unenriched butter enhances the sauce, and makes it luxurious. You can use salted butter if you have it. Just season the dish lightly.
- Garlic Adds a sweet-salty depth of flavor. If you prefer, you can substitute with finely chopped shallots or the white parts from green onions.
- Lemon:The zest and juice are used to add a fragrant quality.
- ParsleyAdds freshness and lifts the rich flavor. It's not a lot, but it makes a huge difference. I wouldn't substitute it or skip it.
- Spices Spanish sweet paprika is a mild spice that adds color. Red Pepper Flakes,or the milder cousin Aleppo Pepper, can be substituted for it. If you want to avoid all spice, then leave them out. You can also substitute ground black pepper.
- Kosher Salt: Enhances the flavor.
How To Butterfly A Lobster Tail
The purpose of butterflying the tail of a lobster isn't just to look good! This simple technique takes only a minute and allows butter to be absorbed directly into the meat. The exposed meat cooks quickly, so the meat stays juicy and tender. To butterfly lobster tail, follow these steps:
- Half the shell. The thicker end of the shell should be facing you. Start by cutting the middle of the shell in lengthways using a pair good kitchen shears. When you reach the tail, stop.
- Butterfly the lobster tail. Spread the shell gently and run your thumbs over the surface to separate the meat from shell. Pull the meat of the lobster up towards you. Leave it attached at the base. Rest it on the top of its shell.
How To Cook Lobster Tail
To Make it:
- Melt two tablespoons of butter on low heat in the microwave or stove. Add 2 tablespoons olive oil to a small bowl.
- Add aromatics: Very finely mince between 1 and 2 garlic cloves. Chop enough parsley to equal 1 heaping teaspoon. Add the parsley to the bowl.
- Seasoning and mixing:Zest and mix a lemon in a small bowl. Set aside for later. Slice the lemon in half and squeeze half of it into the bowl containing the butter mixture. Add a pinch salt, 1/2 teaspoon of red pepper flakes and sweet paprika or Aleppo Pepper. Mix well. Pour half the sauce in a small serving bowl.
- Prepare yourself. Set up your oven. The broiler should be set to high (or at 500 degrees F).
- Brush lobster meat. Arrange four butterflied tails with the flesh facing outwards on a baking sheet. Brush the remaining sauce over the lobster tails.
- Broil. Broil. Place the sheet pan in the broiler until the meat is opaque and lightly browned. It takes approximately 1 minute for each ounce of tail lobster or 7-10 minutes total depending on size. While the lobster is being cooked, cut the lemon halves into wedges.
- Finish and serve. Place the lemon wedges around the platter and the broiled tails. Brush the flesh with the remaining sauce and drizzle it over the lobster. Sprinkle the lemon zest that you have saved and serve the lobster immediately. Keep the sauce remaining in a small dish to dip into.
How to serve lobster tails
If you want to serve this recipe for a casual dinner or date night, use a fork, knife and Grand Aioli. It's like a party plate, but with plenty of seafood and garlicky aioli.
Prepare everything, except for the lobster tails. Prepare a platter of boiled potatoes, crudites (either herby or simple fingerlings), hard-boiled eggs and other shellfish such as shrimp and mussels. Serve the food at room temperature, with aioli and the lobster grilled just before serving. Let your guests enjoy!

Lobster tail with lemon, garlic and Aleppo Pepper
Ingredients
- 4 Lobster tails (8-10 ounces)
- 2 tablespoons extra virgin olive oil
- 2 tablespoons unsalted butter, melted
- 1 or 2 large cloves of garlic as finely minced as possible
- 1 Lemon, Zested and half
- heaping teaspoon finely chopped parsley
- 1/2 teaspoon sweet Spanish paprika
- 1/2 teaspoon red or Aleppo pepper flakes, or to your taste
- Kosher Salt
Instructions

Set the broil function to high (or 500degF). Broil on high (or at 500degF ).

The lobster tail is a butterfly. Spread the shell gently and slide your thumbs in between the meat and shell sides to separate the meat. Pull the meat of the lobster up towards you. Leave it attached to the tail fan. Rest it on the top of shell. Repeat the process with all remaining lobster tails.

Combine the oil, butter, garlic and juice from 1/2 a lemon in a small bowl. Add the parsley, paprika or red pepper flakes, Aleppo peppers, and salt. Stir well. Pour half the sauce in a small serving bowl.

Brush the meat of the lobsters. Arrange them on a baking sheet with the flesh facing out. Brush any remaining sauce on the lobster tails.

Broil. Place a sheet pan in the broiler. Broil until the top is lightly browned and the meat has become opaque. It takes approximately 1 minute for each ounce of lobster tail, or 7-10 minutes total depending on size.

Serve the lobster tails broiled on a platter. Slice the lemon halves into wedges, and place them on the platter. Brush the lobster with the remaining sauce and drizzle more over it. Sprinkle the lemon zest over the lobster and serve it immediately. Keep the sauce remaining in a small dish to dip into.
Notes
- When the lobster meat turns from pinkish-white and translucent to opaque, it is ready. You can use a digital thermometer to check the temperature. The thickest part of the lobster should be between 135degF and 140degF.
