Sweet Noodle Kugel

Kugel, a Jewish dish that is similar to a pudding or casserole and is a Shavout tradition.

INGREDIENTS:
Golden raisins
12 oz wide egg noodles
6 large eggs
1 lb sour cream
8 oz cottage cheese
8 oz cream cheese, softened
Sugar, 1 cup
1/4 cup unsalted Butter, melted
1/4 teaspoon salt
Vanilla 1 teaspoon
Dusting with cinnamon and sugar
Nonstick Cooking Oil Spray

DIRECTIONS:

large pot, food processor or blender, 9x13 baking dish

Pre-heat the oven to 350 degrees F. Cover raisins in hot water to plump them up while preparing the other ingredients.
Bring a large pot full of water to the boil. Add the noodles, return the water to a rolling boil and cook for about 5 minutes. Drain the noodles and add them back to the pot.
Mix the cottage cheese, creamed cheese, sugar and melted butter in a food processor.
Pour the egg mixture on top of the noodles and mix well.
Rinse and dry the raisins. Stir the raisins into the noodles.
Spray nonstick cooking oil on a baking dish measuring 9x13 inches. Pour the noodle mix into the dish
Sprinkle sugar and cinnamon on top of the kugel.
Turn the kugel once half-way through cooking. Bake for 60 minutes or until the center is set and the tips are golden brown. Remove the kugel from the oven.
Allow the kugel to rest for 15 minutes before cutting. Kugel is served either warm or chilled.
