Tomatillo Roasted Vegetable Blend

Roasted Vegetables in a unique Sweet and Savory Blend


This recipe makes 4 servings
Ingredients :
Tomatillos chopped
Granny Smith Apples sliced
1 - Med. Yellow onion chopped
Olive oil
1/4 teaspoon garlic powder
Cilantro dried, 1/4 teaspoon
Taste salt and pepper

Directions:
Pre-heat oven to 400 degrees
To prepare, remove the husk from the Tomatillos. Wash them and then cut into quarters. Place in a medium-sized bowl. bowl.
Remove the core from the apples and slice them into cubes of 1 inch. Place in a bowl.
Remove the ends of the onion, peel it and then cut the onion into 8 wedges. Separate them and place them in a bowl.

Sprinkle the vegetables with Olive Oil, Salt and Pepper and add the Garlic Powder and Cilantro. Toss them to combine and then pour the mixture onto a baking tray and bake for 30 minutes. till tender. Serve warm. I served it with Chicken Chimichangas and Salsa Verde. By: [email protected]
