Torta di Carote (Italian Carrot Cake)

Italian carrot cake is light and airy, without any butter, oil, or dairy. Whipping egg whites until stiff peaks is what gives the cake its lift. Then fold them into the batter. The cake is lightly sweetened with orange zest and finished with warm honey drizzled on top. It's the best healthy carrot cake I have ever had!

Torta di Carote, a Northern Italian carrot cake, is light and elegant. It contains no butter, dairy, oil or dairy. This healthy carrot cake recipe is sweetened with orange zest and early summer carrots. It also contains a little sugar, which is a nice contrast to American carrot cakes.

Although I don't mind cakes with cream cheese frosting, I sometimes prefer that the sweetness of my desserts be whispered rather than shouted at. Italian carrot cake is my go-to when I want to add sophistication and subtlety to my meals.

This cake is a favorite of mine to make for holidays and when I'm hosting company. It tastes even better the next day! It's great to serve with lemon ginger tea, Mother's Day brunch, or after a summer soirée with a cup spiked coffee.

What's Italian Carrot Cake?

Let's just say that you wouldn't know they were related if you asked how Italian Carrot Cake compares to its American cousin. Italian Carrot Cake has no frosting and a more savory almond taste due to the toasted almond flour. This makes it a worthy dessert and breakfast choice.

If you have only had American-style carrot cakes, which are heavy with dried fruits, spices and cream cheese frosting, then this is your chance to experience carrot cake in a whole new way.

This healthy carrot cake recipe is a light sweet and dairy-free dessert recipe. All you need to do is add a little honey and some powdered sugar. If you wish to guild the lily, add sweetened yogurt, cream, or ice cream.

What's in Italian Carrot Cake?

Grated carrots are the star of this healthy carrot cake recipe. However, toasted almond flour adds a rich, nutty background. The cake's flavor profile includes almond extract and orange zest. Whipping egg whites make it tender and springy.

  • Blanched almond meal: This flour, also known as almond meal, is made from sweet almonds that have had the dark skins removed. Almond flour adds a rich, moist texture to baked goods and a nutty taste. This carrot cake recipe uses blanched almond flour. It really brings out the nuttiness. Almond flour is high in oil and can quickly go rancid. Any extra should be kept in the freezer.
  • All purpose flour : Made of wheat, all-purpose bread flour provides structure for the carrot cake. You can substitute gluten-free all purpose flour for those who are unable to eat gluten. The cake will be less dense than the original.
  • Baking Powder: Add baking powder to liquid and carbon dioxide bubbles are released. This creates a soft, airy texture for the final cake.
  • Organic sugar: Organic sugar has a more complex flavor than refined sugar. The crystals are slightly larger in size and have a light golden color. If you don't have white sugar, you can substitute it with fine quality. Organic cane sugar is my favorite because of its slightly caramelized taste.
  • Orange zest - Fresh orange zest gives your dishes a bright, citrusy taste and aroma. To release the flavorful oils, rub the zest in the sugar with your fingertips.
  • Eggs - Eggs give structure and richness to the cakes. The whites of the eggs are separated, and then whipped to stiff peak. The whites are then folded into batter. This gives the cake a light, airy crumb that counterbalances any heavy almond flour or grated carrots.
  • Grated carrots - Spring carrots are extremely tender and delicately sweet. You want bright, firm carrots so scrub them well. To get rid of dirt and other debris, scrub them well. When I'm going to grate carrots, I don’t bother peeling them, especially fresh ones. Finely grate carrots. This makes them disappear into the batter, which results in a soft and sweet slice of cake.
  • Almond extract - When I created this recipe for a restaurant in which I was the pastry chef I used orange blossom water. It can be difficult to find orange blossom water so I substituted almond extract. This concentrated liquid is made from bitter almonds. Both give baked goods a unique floral flavor that I love. Vanilla extract can be substituted if you don't like the flavor or don't have it on hand. For a delicate citrus-scented cake, substitute the almond extract with orange blossom water.
  • Kosher Salt: Salt enhances baked goods' flavor. Because it is clean and salty, Kosher salt can be used here.
  • This powdered sugar is made of finely ground white sugar and cornstarch. This simple, yet elegant topping is perfect for this healthy carrot cake recipe. You might like something a bit more extravagant? Add a tablespoon of Greek yogurt to each slice and drizzle with honey. Our Crete-sourced Greek Honey is my favorite.

How to Make Italian Carrot Cake

  • Prepare: Heat oven to 350°F. Lightly oil a 9-inch round cake pan. Line the bottom with parchment.
  • Toast the almond flour. Spread the almond flour in an even layer on a baking tray, breaking up any lumps. After 5 minutes in the oven, toast the almond flour. Then remove the flour from oven and stir. To evenly distribute almond flour, shake the tray and toast for another 2 to 3 minutes or until golden brown. Make sure you don't let the flour scorch around edges. Allow the flour to cool in the oven before you continue with the recipe.
  • Mix the flour. Combine the all-purpose flour with the baking powder in a small bowl. Mix the almond flour with the mixture until it is well combined.
  • Mix the sugar with the zest. Place the sugar and finely grated zest of 1 orange in large bowl. You can rub the zest in the sugar with your fingers until it is evenly distributed and very fragrant.
  • Add the flour mixture, carrots and almond extract.Add flour and baking powder, finely grated carrots and almond extract to egg and sugar mixture. Stir the mixture with a stiff spatula until it is well combined. You may need to use your hands to gently mix the batter.
  • Add the yolks to the sugar-orange zest mixture. Separate and place the whites aside. The sugar-orange zest mixture should be mixed with the yolks. Use a hand mixer or a whisk with a strong arm to vigorously whip the yolks into the sugar mixture. This should take approximately 4 minutes.
  • Beat the egg yolks. Add the eggwhite and kosher salt into a large bowl. Mix the egg whites and kosher salt in a large bowl. Beat or whip until stiff peaks appear. Stiff peaks is when the egg whites that are clinging on to the beaters stand straight up without drooping.
  • Add 1/3 of the egg yolks to the carrot batter. Use a stiff spatula to fold 1/3 of the eggwhites in. Fold in 1/3 more egg whites. Don't worry about fully incorporating at this stage. We're simply trying to loosen the stiff batter. Fold in 1/3 of the remaining egg whites once the egg whites have been incorporated. Fold gently until there are no more white streaks.
  • Make the carrot cake. Pour the batter into the prepared pan. Use a spatula to smoothen the top of the pan. Place the pan on a baking sheet. To ensure an even baked cake, bake for 55-60 minutes. When the top of the cake is deeply golden and the sides begin to pull away, the cake is done.
  • Let cool and then serve: Allow the cake to cool completely on a wire rack for about an hour. Run a butter knife along both sides of the pan to remove the cake. Then, gently flip the cake onto a plate. The parchment should be removed from the top of your cake. Allow the cake to cool completely before you serve it. Wrap the cake in plastic and let it cool at room temperature. I prefer this cake the next day. Dust the top of your cake with powdered sugar just before serving.

Tips & Tricks to Make Italian Carrot Cake

This cake recipe is very easy to make. To achieve the perfect flavor and consistency, you only need to use a few basic baking techniques. Here are some of my top tips and tricks for baking the perfect Italian carrot cake.

How to toast nuts flours and why:

  • Why nuts should be toasted: To add complexity to the final cake, it is worth toasting nuts and nut flours. To give the cake a warm and nutty taste, toast almond flour until it is lightly golden brown. It helps to balance the delicate sweetness of the carrot.
  • Toasting nut flours in the oven: Almond meal will brown evenly. Keep an eye on your oven, and make sure to check it often. Almond meal can quickly go from brown to burnt! For perfectly toasted almond flour stir the flour halfway through.

Eggs

Although it may seem daunting to separate eggs and prepare yolks and whites in different ways can be intimidating. But with some simple guidelines you will feel like a pro pastry chef in no time. First, let's clarify why this is necessary.

  • Egg yolksBeating egg yolks with sugar accomplishes two important things for our cake. It dissolves sugar granules, so they are not gritty, as well as incorporating air into the cake. This creates a light and fluffy texture.
  • Yolks with sugar:Sugar begins sucking water from the yolks as soon as it comes in contact with sugar. This can lead to a buildup of egg yolks that are "cooked" in your cake batter. It is best to mix the two together before you beat them together. A hand mixer is a good choice.
  • Egg whitesWhipping egg whites to stiff peak adds volume to your cakes. The batter is very thick without the whites so gently fold the whipped egg whites into your batter to create a fluffy, ethereal texture.
  • Stiff peak I recommend using an electric hand mixer to accomplish this step. It takes approximately 3-4 minutes to whip the whites into stiff peaks even with a hand mixer. Stiff peaks are achieved when the egg white mixture is straight from the beater or whisk. Continue whisking for another minute if the mixture begins to droop. If the whites appear crumbly, it's too much. It's best to restart the process if they're not being whisked enough.

My egg whites don't jiggle. They fold

After whipping the egg whites to stiff peaks, it's time to fold the egg whites into the healthy carrot cake batter. We want to gently fold the egg yolks into the batter. This will make the batter lighter and create a delicate, tender cake.

Folding is the gentle incorporation of whipped ingredients into a batter. This preserves a light and airy texture.

  • To incorporate the egg whites, use a silicone spatula.
  • Incorporate 1/3 of the whipped eggs whites into the batter. Use your spatula again to wrap the bowl around. Then, cut through the middle of your bowl and scrape the rim.
  • Continue these steps until you have left only a few white streaks. Continue to fold in the egg whites using the same method.
  • Although it may seem difficult at first, you should resist the temptation to just stir the egg whites into your batter. This will cause them to become too flat and result in a dense cake.

Subs, Variations, and Swaps

Italian Carrot Cake, like its American counterpart is adaptable. Don't like orange zest? Use lemon instead. Are you not a fan of almonds? Instead of almond flour, try walnut or hazelnut meal. Do not use cream cheese frosting to garnish your cake. It will completely overwhelm the delicate sweetness of the cake.

  • Almond extracts: If you don't love almond extract, you could use vanilla extract. Or you could swap the almond extract with orange blossom water. I love its soft and floral taste.
  • Almond flour In this recipe, I use blanched almond flour. Almond meal is made by removing the almond skins. You can substitute unblanched or unskinned almond meal, but it is naturally darker in color. To ensure it doesn't turn brown, you need to be careful when toasting.
  • Orange zest You can substitute lemon or grapefruit zest for this recipe if it appeals to you. No matter what citrus oil you choose, it is essential to rub the zest into the sugar. This will release the citrus oils and create a fragrant cake.
  • Toppings: I like to make Italian carrot cakes with just a dusting of powdered Sugar or greek yogurt, and drizzle of honey. The cream cheese frosting should be kept for American-style carrot cakes. A rich cream cheese frosting could overpower the delicate sweetness of this healthy recipe.

What to serve with Italian Carrot Cake

This cake is best served at Easter. After a large holiday meal that included Mediterranean-Style Roasted Leg Of Lamb, Blanched Asparagus, Mediterranean Salsa, and a Tuscan White bean Salad, the delicate, lightly sweet slices will not overwhelm.

This healthy and delicious carrot cake is great for any occasion. This can be served as part of a lovely brunch spread with Italian Style Open-Faced Breakfast Sandwiches or a simple Italian-inspired Strata Baked egg Casserole.

Ingredients

  • 2 cups (202g) blanched almond flour
  • 2/3 cup (89g) all purpose flour
  • 1 tablespoon (14g) baking powder
  • 1 cup (228g) organic cane sugar
  • 1 orange, zested
  • 5 eggs, separated
  • 3 large carrots (313g), finely grated (about 4 loosely packed cups)
  • 1 teaspoon almond extract or orange blossom water
  • 1/4 teaspoon kosher salt
  • Powdered sugar
  • 1/4 cup honey, warmed for serving

Instructions

  • Pre-heat your oven and prepare your cake pan. Lightly oil a 9-inch pan and then line it with parchment.
  • Toast the almond flour. Spread the almond flour in an even layer on a baking tray, breaking up any clumps. Toast the baking sheet for five minutes in the oven. Spread the almond flour on the baking sheet. Continue to toast for another 2 minutes. Let cool completely in the oven.
  • Mix the flour in a bowl. Mix in the cooled almond flour. Stir to combine.
  • Mix the sugar, zest and eggs. Use your fingertips to rub the zest into sugar until it becomes clumpy. It will smell very fragrant. Add the egg yolks and mix well.
  • Mix the yolks with the sugar mixture: Use a hand mixer to beat the egg yolks together until they become fluffy and lighten to a pale yellow.
  • Add the flour, carrots, almond extract, and shredded carrots to the egg yolk, sugar, and sugar mixture. Mix everything with a stiff spatula until it is well combined. You may need to use your hands to gently mix the batter together.
  • Whip the egg whites. Wash the egg beaters well or use the whisk attachment to whip the egg whites. Combine the egg whites with salt in a large bowl. Mix the ingredients on high speed until you get stiff peaks, approximately 3 minutes.
  • Fold 1/3 of the egg mixture into the batter. Continue with the third egg white mixture. Once it is well combined, fold in the rest of the egg white mixture. You will find it very stiff at first, but you can keep going until there are no white streaks.
  • Place the batter in the prepared pan. Place the sheet tray on the middle rack of the oven. Turn the cake halfway through baking until it is golden brown and the sides are starting to separate from the tin. This should take between 55-60 minutes.
  • Cool the cake. Let it cool completely on a wire rack. After the cake has cooled, use a butter knife to gently flip the cake onto a plate. The parchment should be removed from the bottom of your cake.
  • Make sure to dust the cake with powdered sugar just before you serve it. Drizzle with honey. Add a little greek yogurt with a sweetener to give the cake an extra kick. You can keep the carrot cake at room temperature for up to five days if it is tightly wrapped.
