This low-carb recipe is one I've been working on for many years. I perfected it in 2013, when I shared it first with you.
Easy Dairy-Free Pecan Pie
This gluten-free dessert took me a long time to make. I challenged myself to use the fewest ingredients possible.
I wanted something quick and easy that could be made the day before Thanksgiving or any other holiday.

Low-Carb Pecan pie
This Chocolate Pecan Pie recipe is not as low carb as my other recipes.
It is certainly low-carb compared to the traditional chocolate pecan pies.
This dessert contains cups of cornsyrup, sugar and milk chocolate, all served with a white flour crust that is high in carbohydrates.
Elana: Where do you get your recipe inspiration?
This Chocolate Pecan Pie is based on a recipe from my dearest friend Karin, the founder of Sweet Mary Jane.
This is the result of my study of her recipe. I made several changes to make it gluten-free and dairy-free. It also has less carbohydrates.
Kids Friendly Chocolate Pecan pie Recipe
When I shared my first recipe for a kid-friendly Chocolate Pecan Pie in 2013, the boys in 8th and ninth grade were at that time.

The boys and their friends were happy to test this recipe for healthy desserts. They were happy to test batch after batch.
I can remember that they "snuck" a piece of this pie at midnight as a snack during a sleepover with friends.
The next morning, they all looked adorable and guilty.

They didn't know that they were eating an antioxidant-rich, low-carb dessert with a healthy dose of fat, thanks to the pecans and nut-flour-crust.

Begin by making baseline assessments of your progress. Take measurements such as body fat and weight. These metrics will allow you to compare your body's development and change over time.
Measurements are only one thing. Take some time to notice how your body feels. Notice any changes made before or during the start of the diet. It's not uncommon for someone trying a new diet such as the paleo one to feel more energetic or notice a drop in weight. You may not be able to notice subtle changes in your body and get important feedback on whether you should continue with the diet.
Finally, you can get a clear idea of whether something is working for you by talking to trusted professionals such personal trainers, nutritionists, and other health professionals.
