Eat Your Veggies Series – Cabbage Fritters

Although I don't want to brag, I do love cabbage. This is a new passion. It's a new love. Prior to this, cabbage was a vegetable I used to make cabbage slaw to go with fish tacos. It was also possible to braise it but this seemed like too much work. My life changed forever when a friend suggested roasting it. It's easy to do and tastes amazing. Now I have cabbage in my fridge every week so that I can make cabbage fritters and roasted cabbage. It's not a sexy dish, but cabbage fritters aren't. It has very modest appeal. Cabbage is the vegetable that doesn’t know all it can offer. Cabbage will accept any flavor that you put into it. Do you want it spicy? It will agree. It should be crunchy. It will agree. It should be slightly charred and soft. This is the vegetable that will make you smile. Let me say this: cabbage needs confidence. It needs to know that it's versatile, delicious, and deserves a place at everyone's table.

Speaking of your table: I have decided to create a series I find enjoyable called 'Eat Your Veggies.' My intention is clear, I believe. I want you to eat your vegetables. It is easy to fall into the same vegetable ruts week after week. We are familiar with our favorite vegetables, what is quick and easy to prepare, and we stick with them. But this can lead to nutritional imbalance. It is so important to eat a variety of vegetables. My new goal is for you to change your vegetable routine and break out of your rut. I currently have two series on the go - Eat Your Veggies and Meals I Love. I hope they inspire you to make simple, delicious meals and help you feel more confident in the kitchen. Let cabbage become a butterfly. Let the cabbagey wings flap and fly in your kitchen like a butterfly!

Eat Your Veggies Series - Cabbage Fritters

  • Total Time: 40 minutes
  • Yield: 10-12 fritters

Ingredients

  • 250g thinly-sliced green cabbage (this is usually about half depending on how big you get).
  • 1 Cup Low Fat Cottage Cheese*
  • 3 eggs
  • 2 tablespoons gluten free flour
  • A good pinch of salt
  • 1 teaspoon Garlic powder
  • 3-4 tablespoons avocado oil

Instructions

  1. Mix all ingredients together (except the avocado oil) in bowl.
  2. Place a large nonstick pan over medium heat. Let the oil heat up before adding the oil. You will need an ice cream scoop or a spoon to scoop 1/3 to 1/2 cup of the cabbage mixture. Place the fritter in the oil and press down gently with a spatula. Cook for about 3-5 minutes, until it turns golden brown. Let the mixture drain on a towel, and then continue to cook the rest of the batches. I made three batches. The batter should yield 12 fritters.

Notes

If you prefer to keep dairy-free, remove the cottage cheese from the recipe and add 2 tablespoons flour. Cottage cheese is a great source of protein for me, but that's just my opinion!
