Equipment

  • Food Processor
  • Mini Loaf Pans

Ingredients

  • cup blanched almond flour (not almond meal).
  • 1 tablespoon pumpkin pie spice
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon celtic sea salt
  • 1/2 cup roasted pumpkin or roasted squash
  • 3 large eggs
  • 2 tablespoons honey
  • 1/4 teaspoon stevia

Instructions

  • In the food processor, combine almond flour with pumpkin pie spice and baking soda
  • Pulse for 2 minutes pumpkin, eggs and honey.
  • Pour batter into a mini loaf pan that has been greased
  • Place a cookie sheet on the rack one below
  • Bake at 350degF 35-45 minutes
  • Cool for an hour
  • You can also serve
