While going gluten-free is a trend, and is part of a real food diet that includes Paleo, Vegan, and everything in between, it's important to know why gluten is such a concern. What is gluten?

Gluten is a composite protein found in grains such as wheat, barley and rye. It is made up of two proteins: gliadin, and glutenin. These provide dough with elasticity, and help it to rise and keep its shape when baking.

Gluten Sensitivity: A Non-Celiac Condition

Gluten sensitivity, also known as non-celiac celiac gluten sensitivity, is not an auto immune disorder and does not cause the same level of damage to the intestines. Gluten can cause some distressing symptoms. The exact mechanisms of gluten sensitivity are not known, but they do not involve the same type of immune response as celiac.

Diagnose: Diagnosing Gluten Sensitivity can be difficult as there aren't any biomarkers. This involves eliminating celiac and wheat allergies and observing symptoms improvement when on a gluten free diet.
