You will soon see new blog series! This series will focus on meals I make at home for my family and that I truly love. It is rare for me to make extravagant meals, especially when we are at this stage in our lives with Avery. However, I want my meals to be elegant and elevated. Since I have been spending weekends at the fish markets, I have been eating a lot more fish, including halibut. The more I learn to cook fish, the easier it is for me. A meat thermometer is a must-have if you are afraid of fish, especially if it's expensive. This will ensure that your fish is always at the right temperature and that you have fresh, flakey fish every time. This will allow you to have a delicious meal that is easy on the eyes. It's elegant and nutritiously dense. It's a win-win-win situation!
You'll also find other recipes in this series, including pan-fried barramundi, a couscous dish, miso-marinated cod with roasted cabbage, cabbage fritters and whipped cottage cheese bowls, and marinated flank steak with parmesan potato. A second series, titled 'Eat More Vegetables' will be created to inspire you to explore new vegetables. Sometimes I feel like I need to make fancy recipes for my blog. But I believe I will go back to what feels right. It's food that is both filling and indulgent, but also nourishing and nutritious. I hope that you agree with me.

Meals I love - Halibut and Coconut Rice with Citrus Salsa
- Prep Time: 10 minutes
- Cook Time: 25 minutes
- Total Time: 35 minutes

Ingredients
- 1 sticky coconut rice
- 4 oranges
- 1 juice
- 1/2 jalapeno, minced
- 2 tablespoons chopped cilantro
- 2 tablespoons chopped mink
- Salt - pinch
- 4 six-ounce halibut filets
- 2 tablespoons soy sauce or coconut aminos
- avocado oil spray
Instructions
- Make sticky coconut rice
- Pre-heat oven to 350°F. Line a baking tray with parchment paper. Then, take the fish out from the refrigerator and dry it. Sprinkle with some salt.
- Mix together the segments of oranges, lime juice and jalapeno while rice is cooking. Place in the refrigerator.
- After the rice has been cooked for 10 minutes, place the halibut filets onto the baking sheet. To apply soy sauce or coconut aminos to the top, use a basting brush. Spray avocado oil spray on top. Place in the oven for 10-12 minutes until the fish reaches 125°F.
- Top coconut rice with halibut filet and then top it off with citrus salsa
