The Middle Eastern household staple is called schug, which is either a hot chili sauce or a paste.

My Schug recipe has a very mild taste, almost like pesto but without pine nuts.

What does Zhug mean?

Wikipedia says that zhug is a term used to describe the pestling or crushing of food (in JudeoYemenite Arabic). We do this in our recipe, but we use a food processor.

Spiced Green Schug sauce

Prep Time 15 Minutes

Equipment

  • Food Processor
  • Medium Bowl
  • Pint Mason Jar

Ingredients

  • 2 cups parsley, tightly packed
  • 2 cups cilantro, tightly packed
  • 2-3 cloves garlic
  • 1 jalapeno pepper
  • 1/2 teaspoon celtic sea salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon cumin
  • 1/2 teaspoon coriander
  • 1/4 teaspoon ground cardamom
  • 2 tablespoons lemon juice
  • 2 tablespoons olive oil
  • 1 teaspoon the amount of water needed to mix together

Instructions

  • In a food processor, combine all ingredients except water
  • If necessary, pulse the bowl 5 times and then clean it
  • Process 1 Minute
  • Add water if mixture doesn't come together and pulse again
  • Transferring to a Mason Jar
  • Keep in the fridge for up to two weeks

Add a few other fresh herbs to the Schug recipe for a little extra flavor.

How can I add more herbs to Schug Spiced Green Sauce

When I made this Schug last, I added around a teaspoon of oregano and a small amount of basil from our backyard. The flavor became even more complex.

Sussman’s Schug is much spicier. She uses twenty cloves of jalapenos and a dozen garlic. My recipe is for Americans with more delicate taste buds, like mine.

Our son, by the way, made Sussman’s Green Shakshukah. This simple dish, which originated in Northern Africa and consists of vegetables, with poached eggs on top, is a Northern African classic.
