"Hello darling, my old friend. "I've come to speak with you again." Perhaps that's not how the Disturbed song goes, but darkness didn't seem right in this situation. Look at how vibrant this noodle dish looks. But a hello did feel right. I spend most of my free time on my podcast and fitness app. Also, I watch instagram stories. After having a child for 10 months, I feel like I am still getting my bearings. I have a million ideas, but only a few hours in the day. Many people manage to balance their lives, but not me. I'll make it. I'm sure. But I will do my best to show up until then.
Today, we're starting with a noodle dish. Recently, I have been loving salads and I feel like I will be doing a series of salads. Recently, I posted a strawberry-poppyseed salad on Instagram and have been using it to dress every vegetable I can find. I'm going to make this for Avery, but without the honey. We'll see what she says. There has been a noticeable shift as we enter the 10th month. The last 4-5 month. Avery has eaten everything and anything, but we now have a little girl with an opinion. She is now adamantly against doing something she wants and becomes very frustrated. It's said that toddlers are at 12 months old, but I believe we have officially reached this age!
What is my latest obsession? Below Deck. I know that I am about 10 years behind the times, but I still have so many seasons to catch up on. I am a person that likes consistency (jokes, since I have a new baby), so I will watch a show over and over again when I enjoy it. That's what I always do. I take care of all my parental duties and then relax and watch comfort food. I also eat some granola. Since having a child, I love reality shows more than ever. It's possible that I feel like I am doing something naughty. It's easy to judge someone's life and think I'm the best person for them, but I'm not. One thing I know for sure is that this salad will be my leftovers the rest of the day. I love that. That's a great idea.
Thai Peanut Noodle Salad
- Prep Time: 25 minutes
- Cook Time: 10 minutes
- Total Time: 35 minutes
- Yield: 6-8 servings
Ingredients
For the "peanut sauce"
- 3/4 cup peanut butter
- a third of- a half cup water. (Amounts will vary depending on the thickness and size of the peanut butter.
- 2 tablespoons honey
- 2 tablespoons Coconut aminos or Soy Sauce
- 2 tablespoons sriracha
- 1 tablespoon lime juice
- 1 tablespoon sesame oil
The noodle salad
- 8oz Pad Thai Rice Noodles
- half yellow pepper onion, thinly cut
- half thinly sliced red bell pepper
- 1/4 thinly sliced cabbage
- 1/4 thinly sliced red onion
- 2 carrots, julienned
- 1/2 cup cilantro, chopped
- 1/3 cup mint, chopped
- 1/4 cup fresh basil, chopped
- 3 green onions, sliced
- 1 teaspoon sea salt
- 1/2 cup dry roasted salted peanuts
- 12 teaspoon sesame seeds
- half teaspoon black sesame seeds
Instructions
- Blend all ingredients for the peanut sauce in a blender. Set aside.
- Cook rice noodles according to the package instructions. Place noodles in cold water and rinse to cool them down and prevent them from sticking together.
- Put the rest of the veggies and herbs in a large serving bowl. Add salt to the top. Pour peanut butter sauce over the noodles. Mix well, then sprinkle with sesame and peanuts before serving.
