Instructions

Pour the tap water over the rice and rinse. Swish the rice with your hand. Drain, add water, then swish again. Repeat the process until you can swish water that is mostly clear. Drain the rinse water.

Mix 2 1/3 cups water with the rice rinsed in the large pot. Bring the rice to a rolling boil on high heat. Stir the rice and reduce the heat to medium low. Cover the pot, and let it simmer for 15 mins without lifting the lid. Wait 10 more minutes after turning off the heat before removing lid.

Combine the sugar, salt, and rice vinegar in a large bowl. Mix the rice gently while adding it. Allow the rice to cool down to room temperature.

Set a small bowl of water near the mat to wet your hands. Spread a thin layer of sushi rice (except for the top 1/2 inch nori) on the seaweed using wet fingers. Press down gently while spreading.

Add a thin strip of cucumber, carrot and avocado in a line, about 1 1/2 inch away from the bottom (nearest to your hands). Roll your sushi tightly and gently using the bamboo mat. Continue with the remaining pieces of nori until all your rice has been used.

Slice each roll into six to eight pieces using a knife that has been moistened by water. Serve with wasabi, soy sauce and pickled ginger.

- Use sushi rice as soon as the temperature is cool enough. Cover the top of the rice cooker with a wet towel if you are not going to use the rice right away.
