Ingredients required (with substitutions).

  • Soymilk - Vegan buttermilk is made from non-dairy milk and vinegar. If you don't have any soy milk, almond milk is the best alternative.
  • Apple cider vinegar Lemon juice or white vinegar can be substituted.
  • All-purpose flour – I have always had the best results using all-purpose flour. For more information on gluten-free flour, see the FAQs.
  • Granulated Sugar - The cake's structure is enhanced by the addition of granulated white, coconut, or cane sugar. It would not be as delicious without it.
  • Cocoa Powder - Use cocoa powder from natural sources, not Dutch.
  • Baking powder
  • Baking soda
  • Salt
  • Canola oil - Also, melted coconut oil works well.
  • Applesauce This adds moisture to the cake. You can substitute 2 flax eggs or whipped aquafaba for the eggs. Bob's Red Mill has two eggs.
  • Vanilla extract
  • Boiling water - You will never want to stop using boiling water for chocolate cake again. The hot water adds a rich flavor to the chocolate and enhances its hidden flavors. As an alternative, you could use fresh brewed espresso or coffee.
  • Vegan chocolate chips- Mix in flour and then fold into the cake batter. For an extra peanut-y flavor, you can replace them with peanuts.
  • Vegan butter is the base for peanut butter frosting. It should be softened at room temperature to ensure that the frosting is easy to mix.
  • Peanut butter Use smooth peanut butter from an old jar to get the best results.
  • Powdered Sugar - To sweeten and give structure to peanut butter frosting.

How to make vegan chocolate peanut Butter cake

The complete recipe and measurements are below.

Mix the soy milk and vinegar in a measuring cup. Allow it to curdle.

Next, combine the flour, sugar and baking powder in a large bowl.

Add the oil, the applesauce, vanilla, milk/vinegar, and salt to the bowl.

Mix the ingredients with an electric mixer at low speed until well combined. Mix at low speed while slowly adding the boiling water.

Finish by folding the flour-coated chocolate chip into the batter.

Place the batter in prepared pans and bake for about 20 minutes. Allow the layers to cool before you start frosting.

Combine the vegan butter and peanut butter in a bowl. Beat until smooth. Then, add the soy milk, vanilla extract, salt, and powdered sugar to the bowl. Mix again until it becomes fluffy.

Decorate the cooled cakes layers with peanut butter frosting and then the chocolate glaze. Serve it immediately or let it cool in the refrigerator until you are ready to serve. Enjoy!

  • This delicate chocolate cake is best not to overmix. Mix the ingredients only until they are well combined.
  • Before you start this recipe, place the vegan butter, applesauce, and soy milk on your kitchen counter for 30 minutes. You'll get better results if they have time to cool down.
  • The cake was baked in two 8-inch round pans. However, the recipe yields enough batter to bake in a bundt or 9x13 square pan for 35 to 40 minutes.
  • You can thin the frosting by adding a tablespoon of milk to it if it seems too thick. You can add more powdered Sugar if the frosting is too thin.

Decorating tips

To frost the cake, don't use all the peanut butter frosting. Piped frosting looks so delicious on the top! Frost the cake

  1. Add a layer of frosting to the top of the bottom layer.
  2. Add the second layer and decorate the sides and tops with more frosting.

After the cake has been frosted, allow it to cool in the refrigerator for at least 30 min . This will allow the frosting to cool down before you add the chocolate ganache.

You have two options: leave the frosted cake alone or add vegan chocolate ganache to it.

  1. To make the chocolate ganache, let it cool in the refrigerator to thicken.
  2. Spread the thickened ganache on top of the chilled cake. Smoothen it around the sides and top.
  3. To pipe the peanut butter frosting onto the top of the cake, use a star tip on a piping bag.
  4. Sprinkle peanut butter cups, chopped nuts and/or sprinkles over the top. Enjoy!

You will get the best results by using my Gluten-Free Chocolate Cake base and then decorating the cake as usual.

How long will it last?

Frosted and decorated cakes are best eaten immediately, but it is possible to keep them in the refrigerator for up to four hours before you serve them. Remaining leftovers should always be covered and kept in the refrigerator.

Can peanut butter cakes be frozen?

The decorated cake should not be frozen, but the layers of baked cake freeze well. However, if you have too many cakes, it is fine to freeze them. However, it might not look as beautiful once frozen.

Ingredients

Chocolate Cake

  • 1 cup unsweetened soy milk
  • 1 tablespoon apple cider vinegar
  • 2 cups all purpose flour
  • 1 3/4 cups granulated sugar
  • 3/4 cup unsweetened natural cocoa powder
  • 2 teaspoons baking powder
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon salt
  • 1/2 cup canola oil
  • 1/2 cup unsweetened applesauce
  • 1 tablespoon pure vanilla extract
  • 1/2 cup boiling hot water
  • 1 Vegan Chocolate Chips, mixed in a bowl with a tablespoon flour.

Peanut Butter Frosting

  • 3/4 cup vegan butter, softened
  • 1 peanut butter Not the natural type, see Notes
  • 2 cups powdered sugar
  • 1 teaspoon pure vanilla extract
  • 3 tablespoons soy milk or vegan creamer

Instructions

Chocolate cake?

  • Pre-heat oven to 350°F and grease two 8-inch cake pans. For easy removal, I line the pans with parchment rounds.
  • Add 1 cup of soy milk to the bowl. Mix well and let cool before putting in the refrigerator to curdle.
  • Add the flour, sugar and baking powder to a large bowl. Mix well.
  • Add the oil, applesauce, vanilla, and milk/vinegar mix. Mix the ingredients on medium speed using a hand mixer or stand mixer with paddle attachment until they are well combined.
  • Reduce the speed to medium and slowly add the boiling water. Mix the batter into the bowl until it is well combined.
  • Add the flour-coated chocolate chips.
  • Divide the batter equally between your pans. Bake for between 30-35 minutes or until a toothpick inserted into the center comes out clean. Let cool in the pans for 10 minutes before carefully removing the cakes.

Make the peanut butter frosting

  • Use a stand mixer or handheld to beat the peanut butter until creamy.
  • Add the soy milk, vanilla, and powdered sugar. Start with low speed, then increase to medium and continue beating for 2 minutes.
  • If the mixture seems too thick, you can add more milk, just a few tablespoons at time. Add more powdered sugar if it becomes too runny.

Frost and decorate

  • The peanut butter frosting should be used to frost the layers of cake. Spread the peanut butter frosting evenly and place in the fridge for 30 minutes to chill. If you wish, save some to pipe on top of the ganache.
  • If you are using chocolate ganache. After stirring the ganache, let it cool in the refrigerator for between 20-30 minutes to thicken and become smooth.
  • Spread the thickened ganache on the chilled cake. Smoothen it around the sides and top of the cake.
  • Pipe the remaining peanut butter frosting onto the pipe and then sprinkle chopped vegan peanut butter cups over the top.
  • Serve the cake immediately, or let it chill for up to 4 hours before serving. The frosting and ganache will thicken if you chill the cake. This will make the cake look prettier.

Notes

  1. You can use another milk, such as almond, coconut, or oat.
  2. You can substitute apple cider vinegar with lemon juice or white wine.
  3. Use natural, drippy peanut Butter. Use no-swift peanut butter. The natural peanut butter's consistency can make frosting too runny, or too thick.
