You can make this sandwich pretty easily by just slapping whatever you want between two slices of bread. We feel, however (hear us) that the way you arrange the delicious Thanksgiving leftovers can make a huge difference to the enjoyment of this sandwich. Just trust us once, and you will be glad you did.

  1. All leftovers from Thanksgiving and two slices bread.
  2. Heat up your skillet or oven at 400 degrees Fahrenheit for 5 minutes.
  3. Spread the cranberry on the bread. Add the mashed potato (and/or the stuffing) and press it down. Sprinkle the corn and peas. Add the lentil loaf, vegan deli meat, or plant-based turkey slices. Spread the gravy over the top of the second slice of bread. Add salt and pepper. Spray a small amount of oil on the top of your bread.
  4. The sandwich should be placed in the air fryer for 5 minutes on 350 degrees. Spray the other side of the sandwich with oil and cook it for 3 more minutes.

This ultimate air-fryer sandwich made with leftover Thanksgiving food is the most delicious and messy air fryer you will ever have! You can add as many delicious leftovers to your vegan sandwich for Thanksgiving. You can enjoy quick and easy meals all week without worrying about food waste. Warm, savory and absolutely delicious!

Ingredients

  • 2 slices bread your choice
  • 1 tablespoon cranberry sauce
  • 1/4 cup mashed potatoes and/or bread stuffing
  • 1 sprinkling corn and peas optional
  • 1 tablespoon vegan gravy
  • a few thick slices of lentil loaf or veggie roast
  • half teaspoon Salt and pepper or according to taste
  • Oil spray

Instructions

  • Place your leftovers from Thanksgiving on the counter of the kitchen and the bread slices on a platter.
  • Pre-heat the air fryer for 5 minutes at 400 degrees F.
  • As the air fryer heats up, put together the sandwich. Spread the cranberry on the bread evenly, then add the potatoes and/or stuffing. Squish it down. If using, top with corn and/or peas. Next, add the vegan deli meat, lentil loaf, or plant-based turkey slices. Spread the gravy over the top of the second slice of bread (with the gravy inside). If desired, season with salt and/or pepper.
  • You can add anything you want at this point. Just make sure you don't overfill the sandwich so it is difficult to turn half way through cooking.
  • Place the sandwich carefully into the basket of the air fryer.
  • Spray a small amount of oil on the outside of the top piece of bread.
  • After 5 minutes of cooking at 350 degrees, flip the sandwich gently, spray a bit more oil on the other side, and continue to cook for 3 minutes. Once you have flipped the sandwich, make sure to check it frequently so that it does not burn. Use a spatula once you're done to remove the sandwich. Enjoy immediately by cutting in half, diagonally or both!

  • Other Cooking Methods: This sandwich can be heated in the microwave (for 1-2 minutes, until warm but still soft), in an oven at the same temperature for 15-20 minutes (or to desired crispiness), on the stovetop with a nonstick skillet. Heat to medium-high and cook on one side approximately 4 minutes, and then on the other 2-4 minutes. It is important to keep an eye on the food while it cooks because it depends on your pan and your stovetop's heat.
  • The Gluten-Free Version Use a vegan, gluten-free bread. You can also use a bean, lentil or soy-based loaf instead of vegan roasts that are usually made from wheat gluten.
