- Vegan Vanilla Wafers- Kinnikinnick wafers, which are both gluten-free vegan and 365 Everyday vanilla wafers.
- Bananas
- Vegan Whipping Cream -- A tub of whipped topping will do.
What prevents bananas from turning brown in Banana Pudding
is not a complete solution to prevent bananas from browning. The bananas in the middle should stay fresh for a couple of days. You can use bananas that are firm and just barely ripe to layer on top of the pudding. Brush them with orange juice or pineapple juice before adding the bananas. Orange and pineapple juices work well with banana pudding. Lemon juice also works.
If the bananas are browning, don't worry. They're still safe to eat.
How to make vegan banana pudding
This vegan banana pudding doesn't require any special skills. This vegan banana pudding is as easy as it gets!
Begin the pudding. In a small saucepan, whisk the non-dairy creamer, pudding mix and cornstarch. Stir continuously until the mixture thickens and begins to bubble. Let the pudding cool down for a few moments after removing it from the heat.
Mash bananas. Place bananas in large bowls and coarsely mash. You can puree the bananas in a blender to get a smooth, creamy pudding.
Add vanilla extract to the pudding and add the bananas. Fold everything together.
Refrigerate. Cover with plastic wrap and press it to the surface of the pudding. This will prevent skin from developing. Refrigerate the pudding for up to two hours or until it is completely cooled.
Add half the whipped crème to the pudding.
Assembly. Pour 1/4 of the pudding in a 9x9 inch baking dish. Add wafers and slices of banana, half the remaining pudding and then another layer with cookies, bananas and pudding. Refrigerate for 4 hours or more.
Garnish the top and serve. If desired, add additional banana or cookie slices to the top before serving.

- Choose ripe bananas that are still firm. Strike the perfect balance between soft, over-ripe bananas and firm, under-ripe bananas. Under-ripe and over-ripe will not add flavor. Choose bananas with a yellow color and no brown spots.
- Cover bananas. Be sure to cover the bananas completely with the pudding.
- Do not garnish your bananas until you are ready to serve. The wafers will stay crispy and fresh.

Ingredients
- 1 - 4.6 ounce pkg Cook & Serve Vanilla Pudding 130 grams
- 3 Tablespoons Cornstarch 24 grams
- 2 Cups Non-Dairy Milk 480 ml
- 1 teaspoon Vanilla
- 10 ounces Vegan Vanilla Wafers 283 grams
- 5-6 Bananas
- 12 ounces Vegan Whipped Cream
Instructions

In a small pan, combine non-dairy creamer, pudding mix and the cornstarch. Mix until all the dry ingredients have been incorporated. Stir constantly over medium heat until the mixture begins to thicken. Remove from heat, and let cool for a couple of minutes.

Two bananas should be mashed to a pulpy wet consistency. You can puree the bananas in a blender if you do not want any chunks.

Transfer the pudding into a large bowl. Add the vanilla and bananas. Fold the bananas and vanilla together.

Cover the pudding in plastic wrap, pressing the plastic against the surface of the pudding. This will prevent the formation of a skin. Refrigerate for 1-2 hours or until the pudding is completely cooled.

Remove the pudding from the fridge. Fold in half the whipped cream and add the remaining half to the pudding.

Start by assembling your banana pudding in a 9x9 baking pan. Begin by layering pudding (about a quarter of the total pudding), then cookies, and finally banana slices. Spread 1/2 of the remaining mixture over the banana layer, and then repeat the process with the cookies, bananas, and remaining pudding. To prevent the bananas from browning, make sure that the top layer of pudding completely covers them.
