  • You only need a few ingredients. A handful of dates, walnuts and a small amount of chocolate is all you'll really need. The only steps are a few seconds of chopping and a quick spin in the food processor.
  • Nutrients and Fiber. Each Cake Pop will have nearly 2 grams of fiber, omega-3 healthy fats and vitamin E. It also contains calcium, iron magnesium potassium zinc and manganese. Wow!

Choose the best dates for this dessert

In this recipe, the dates you select are crucial. If your is too dry (such as the pitted variety), then you will have a dough that's not moist enough to stay together. A dough that is too wet may be caused by dates that are very fresh.

If the dates are dry, soak them in hot water for 30 minutes and then drain. Then mix with the dates. If the dates are wet, you can add more walnuts.

It is best to buy dates that have pits, and to try to purchase them as fresh as possible. The dates that have been sitting for a long time tend to be drier. Medjool is a better option than Mazafati dates or smaller Deglets.

Not a huge date fan? It's no problem! You can substitute half the dates with other festive and fun dried fruits (up to 1/2 Cup) to make vegan cake balls. Make sure you have at least one of these favorites.

  • Food processor
  • Cake pops and wrappers 12
  • Cake Pop Stand

Ingredients

  • 1 cup raw walnuts
  • 1 cup medjool dates pits removed
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • half cup white chocolate chips dark and/or White Chocolate, Melted
  • sprinkles vegan, to taste

Instructions

  • Place the dates, walnuts, vanilla and salt in the food processor. Process until you get a dough-like mixture.
  • Divide each dough ball into 12 equal parts, roll them into spheres, place the spheres in a container and freeze for 1 hour.
  • Melt chocolate in a small bowl. Pour melted chocolate over a chilled doughball, allow excess to drip, then quickly sprinkle with sprinkles. Place in cake stand.
  • After the chocolate hardens, you can either store the cake pops inside a container that has a lid, serve them at a party on a stand or wrap each one individually.
