  • Water You can make this amazing dairy-free cake with plain tap water! This recipe is lactose free and very affordable.
  • Vegetable Oil: Neutral oils add richness and moisture to the cake, which prevents it from drying out when it is cut. You can use grapeseed, avocado, or rice bran oils, as well as other combinations.
  • Apple Cider Vinegar: A little vinegar will give you a better cake rise. If needed, you can use white vinegar, champagne vinegar, rice or apple cider vinegar.
  • Vanilla Extract: To change the flavor of your vanilla extract, you can replace it with other extracts that you like, such as almond, coconut, peppermint or orange.

This is the step-bystep guide to making this vegan chocolate cake. Mix, pour and bake your cake and you will be well on your way!

Step 1. Combine flour, cocoa, salt and baking soda into a large mixing bowl. Whisk until combined.

Step 3: In a medium bowl, combine water, sugar, oil, applesauce and apple cider vinegar.

Step 4: Once the oven has reached 350degF, mix gently the wet ingredients with the dry ingredients, but be careful not to overmix. This will result in a cake that is too dense.

Step 5: Pour the chocolate cake batter into two 8-inch cake pans, or cupcake tins that have been prepared. Bake for 35 minutes or until toothpicks inserted in the center come out clean. To ensure the best texture and taste, let the cakes cool completely before frosting.

  3. Do not over-mix. Stir the batter just enough to bring it all together. Leave a few lumps if necessary. Too much mixing will result in a dense and tough crumb instead of a light fluffy and tender one.
  4. Test for doneness. Insert a toothpick in the middle of each layer to ensure the cake has been baked through. The cake should come out easily, with no wet batter. The interior should not be completely dry, but it's fine if some crumbs are still clinging.
  5. Let the cake cool completely. Although it's hard to wait, your patience will pay off. The frosting will melt if you remove the cake too soon.
  6. Decorate Let your inner artist out and decorate the cake with whatever you like! I used this vegan chocolate frosting to frost my cake, but you could also use vegan vanilla buttercream, or vegan chocolate ganache.

  • Mug Cakes: For a small amount of indulgence in a coffee mug, grab a spoon and mug! Divide the recipe into half for 8 servings, or quarters to make 4! Microwave the mugs at full power between 1 and 3 minutes until barely set. Allow to stand for a minute, then enjoy.
  • Cupcakes : You can make two dozen cupcakes with this recipe instead of a traditional double layer cake. This is perfect for bake sales, school birthdays or potlucks. Line 24 cupcake pans with paper or silicone liners that can be reused and bake them for 15-18 minutes until the toothpick inserted in the center comes out clean.   • Ice Cream Cake:Add a layer of ice cream to these two cakes for a frozen treat! Make your own ice cream from scratch, or use store-bought icecream in a silicone mould. Instructions

  • Pre-heat oven to 350degF.

* If you want to make a cake with only one layer, half the recipe is all that's needed.
* To make a four-layer cake, cut both layers horizontally in half and then fill.
Fill cupcake liners two-thirds full, and bake them for 15-18 mins or until a toothpick inserted comes out clean.
To make gluten-free, use Bob's Red Mill 1 to 1 Gluten-free Blend instead of the flour.
Tip: Bake the cake as soon as you can after mixing wet and dried ingredients. This will maximize the leavening effect of baking soda.
Storage: Store the cake in a cake carrier, or similar container that is airtight for up to five days at room temperatures or 1 to 2 days if you are storing it in the refrigerator.
