Vegan Matzo Ball Soup Recipe

You'll never find a better vegan matzoball soup recipe! This is the vegan version of Matzo Ball Soup. It is not vegan because it contains eggs or animal fat.

I was looking for a vegan matzoball soup that would be super easy to prepare!

Vegan Matzo Ball Soup

This matzoball soup recipe uses matzo, celery and dill in addition to carrots, onions, celery and carrots.

This vegan soup features fluffy, soft matzos in a warm, flavorful broth. You can use my recipe for vegan matzoballs or you can use a recipe from a package or your family. Then you can continue the recipe for vegan matzo balls soup!

This matzoball soup can be made gluten free by using gluten-free matzoballs. It is also vegan and nut-free.

INGREDIENTS:

  • Vegan matzo balls
  • Onion
  • Carrots
  • Celery
  • Dill
  • Vegetable Broth
  • Oil

How to make Matzo Ball Soup (Vegan):

1. Start making your matzo ball soup by preparing your vegan matzo balls first. Skip to step 2 if you have already prepared your matzo ball soup. Follow my vegan matzoball recipe here if you want to make your matzo balls.

2. Then, in a large pot, heat oil and cook celery, carrots and onion until soft.

3. Add dill to the vegetables and stir for 30 seconds, until fragrant.

4. Bring the soup up to a rolling boil, then reduce the heat and simmer covered for about 40 minutes. After the soup reaches a rolling boil reduce the heat, cover the pot and let it simmer for 40 minutes.

5. Form or create vegan matzoballs and add them to soup broth. Cook at a low simmer for 25-30 mins, or until the soup is heated.

6. Enjoy your vegan matzo soup after you have cooked your matzo balls!

Tip: Store the soup balls in Tupperware containers if you plan to serve the soup later. This will prevent them from becoming soggy. When you're ready to serve, flash boil the soup balls in the broth. Serve hot with 3-4 balls per serving.

Ingredients

  • Vegan Matzo Balls
  • 1 onion finely chopped
  • 2 carrots chopped into half-circles
  • 2 celery stalks chopped
  • 1 teaspoon Dill A handful of fresh chopped dill, or 1/2 tsp-1 Tbsp dried dill according to taste
  • 7 cups vegetable broth
  • 2 Tbsp Coconut oil Or whatever oil you prefer to cook with
  • salt to taste
  • pepper to taste

Instructions
