Many people think of foie gras when they hear it. It is rich and luxurious. It conjures up images of high society and fine French cuisine. It's a luxury food that is enjoyed by those who live extravagant lives and don't mind spending a lot to enjoy it. However, I can assure you that the birds responsible for this costly treat don't live extravagant lives.

Foie gras means "fatty liver" in French. You may think that ducks or geese have high liver fats. But the truth is quite different. Foie gras is not made by ducks or geese. They are forced to have fatty livers.

How are Foie Gras made?

Workers insert feeding tubes into the throats of male ducks twice daily to make foie gras. They then pump the birds with up to 2.2 lbs of fat and grain, which is more than what the waterfowl need to survive. This treatment is given to geese three times a day. Geese also get forced-feed more often than ducks. They can eat up to four pounds per day. This is called gavage.

Force-feeding can lead to livers that are more than 10 times larger than the average. This can lead to a number of problems. Gavage causes many birds to have difficulty standing because their livers dilate their abdomens. Due to extreme stress, they can tear apart their feathers and attack one another.

They live in miserable conditions. They live in small cages or cramped sheds. They are therefore unable to bathe or groom themselves properly and end up covered in their excrement.

How Ducks and Geese Survive for Foie-Gras

A Newsweek reporter visited a foie gras factory farm and discovered that many ducks were unable move due to infection in their feet. This was probably due to the fact that they had to stand for so long on metal grilles during gavage.

Foie gras production is not without its health issues. Other health issues that are common include:

  • Esophageal damage
  • Fungal infections
  • Diarrhea
  • Liver dysfunction
  • Heat stress
  • Lesions
  • Fractures in the Sternum

Many birds die in the process of gavage. Aspiration pneumonia is one of the most common causes of death. Force-feeding causes the birds to swallow the grain. Research has shown that force-fed birds have a 20-fold higher mortality rate than those who are not fed.

It's Not Just About the Birds.

Foie gras production is not just about this. Foie gras is only made from male ducks. This means that female ducklings cannot be used for this purpose. However, something else is done with them. Each year, 40 million ducklings are killed in France. This is done, among other things, to make fertilizer and cat food.

A Hudson Valley Foie Gras investigation in New York revealed something even more shocking. One worker at the plant was expected force-feed 500 birds three days a day. It may seem difficult to imagine how safe it is to force-feed 500 birds at such a rapid pace. It is most certainly not safe. Their work pace only led to an even higher rate of mortality.

Force-feeding any animal is cruel and inhumane. However, there are safer methods. Many ducks were left with injuries and pain during the feeding process, according to the investigation. Many ducks died from the shock of their organs burst during the feeding process. One duck that we saw at the plant had a neck so full of maggots that it would drink water from every hole.

There is hope for a brighter future

Many producers are looking to move their production to countries where they can continue to produce foie gras despite increasingly strict laws and regulations. China is one of the top choices for these producers. China does not have any laws that protect animals from cruelty.

Foie Gras Bans Around The World

Due to the growing activism and the efforts of citizens to engage their representatives in passing legislation that supports animal welfare, many states are currently considering banning foie gras production. California is one state that has banned foie gras production. They are currently arguing with courts about whether the product should be allowed to be sold in the first instance.

Force-feeding animals in other countries like the United Kingdom, Germany, Norway, Israel, and Germany has been made illegal. These countries have banned foie gras production. However, they haven't banned importation of foie gras and it can still be eaten regularly.

India has, however, gone beyond the call of duty. India has banned all imports of the product, rather than just banning its production. It can't legally be sold anywhere, no matter where it is from. Although it may seem like a small amount of change to ban the product in one country, India has 1.3 billion people. This is a huge win for animal welfare.

Vegan Foie Gras Alternatives

Foie gras is no longer necessary. There are many cruelty-free and plant-based alternatives. One company has developed a vegan version of foie gras with Rhiza in recent years. This microbe is derived from fungi and undergoes a fermentation using potato starch, or other plant-based products. This gives you a convincing, meat-like base which is perfect for imitating foie gras.

Mycelium meats from The Better Meat Co. are not only free of cruelty, but they also offer a healthier alternative. These plant-based meats are higher in protein than eggs, have more iron than beef and more fiber than oats. They also contain no cholesterol or saturated oils. It is also a good source of vitamin B12.

They are currently partnering with restaurants and brands to bring their products to customers, including many California restaurants as well as Hormel Foods.

A similar effort was made in Spain by Hello Plant Foods, who created a vegan foie gras called Fuah! It was so popular that it sold out in 12 hours. The version they made is made with cashews and coconut oil as well as beetroot extract and a little bit of cognac.
