3-Ingredient Chroizo & Egg Bell Pepper Rings

These chorizo and bell pepper rings will become a favorite in your family. They are delicious, nutritious, and colorful. Stir-fry the chorizo to add some spice. Add in the bell pepper ring and crack an egg carefully into each ring.

Bell peppers are not only keto-friendly but also packed with fiber and nutrients. It may seem odd to eat vegetables for breakfast but bell pepper is found in many brunch favorites, including shakshukas, breakfast burritos and savory muffins.

Convenience is one of the reasons you should add this recipe to your rotation. The dish takes under 15 minutes to prepare (including the prep) and has only three ingredients. Yields two servings of three-ingredient egg bell pepper rings

Preparation

  • 4 ounce chorizo sausage
  • Red bell pepper
  • 4 large eggs
  • salt and pepper

The Execution

1. All ingredients should be gathered and prepared. If your sausage comes in a case, use a knife to cut it open and remove the meat.

2. Slice the pepper into rings between 1/4 and 1/3 inch thick.

3. Cook the chorizo in a medium-high pan until it is browned and crispy. Around 5 minutes. Remove the pan and any remaining grease.

4. Reduce the heat of the pan to medium or medium-low. Crack eggs into the pepper rings and then place them in the pan.

5. Sprinkle eggs with salt and black pepper. Sprinkle the crispy chorizo on top. Garnish with fresh cilantro chopped and lime juice if desired.

6. Enjoy!
