Einkorn Herb Biscuits


Herb Biscuits
These biscuits were inspired by a recipe for Garlic Butter Keto Bread at Eatwell101.com. I made some changes in ingredients, amounts and how I baked them.  The final product was so good I felt compelled to post it on my blog for you all to try some time.  This recipe with my modifications is not suitable until you are adding back grains during Atkins Phase 2.  These were very filling and we could only eat one, which is good, because they are a little higher in carbs than most of my breads.  But they were delicious!  I served them with lobster tails and salad tonight.

Herb Biscuits - up close

INGREDIENTS:

2 T. butter

2 T. parsley, chopped

2 cloves garlic, minced

1 tsp. poppy seeds (optional)

1½ c. almond flour

2 T. Einkorn flour (omit for slightly lower carbs)

1½ tsp. baking powder

1 tsp. psyllium husk powder

2 oz. cream cheese

2½ c. shredded mozzarella cheese

3 large eggs, beaten

DIRECTIONS:  In a small bowl, melt the butter in the microwave for 1 minute.  Stir in the parsley, garlic and poppy seeds (if using).  Set aside for now.  Preheat oven to 350º.

Lightly oil a 9″ cast iron skillet (I used an ebilskiver pan) or 7 slots of a large-muffin pan.  Beat the eggs in a small bowl and set aside.  On a paper plate, measure out the dry ingredients and stir.  Set aside.  In a large glass bowl, place the mozzarella and cream cheese.  Microwave the cheeses on high for 1-2 minutes to melt well. Remove and stir well with a fork.  Add the eggs and dry ingredients all at once and stir rapidly to mix the dry ingredients with the eggs and cheese.  Knead a few times if needed to blend well.    Spoon up about 1/2c. dough and slightly roll.  Place a ball of thick dough into each of seven slots of your pan. Press smoothly down into the slots.  If using a cast iron skillet, place 6 of the biscuits around the outside of the oiled skillet.  Place the 7th roll in the center.  They will be touching when done if not before cooking.

With a fork, dip the melted butter-parsley mixture onto each roll top, pressing slightly down into the rolls with the tines of the fork.  Pop into a 350º oven and bake for 20 minutes.  Turn oven up to 450º and bake for another 5-6 minutes to brown the tops to your liking.  Remove and serve hot with butter.

First, choose the right fats and proteins for your needs. You can substitute butter with coconut oil, avocado oil and tahini. Meat substitutes, such as tofu or tempeh, can be used as an alternate source of protein. Nuts and seed provide delicious crunchy textures.

If you are looking for sweets, creamy coconut cream or plant-based yogurts work well as substitutes for heavy cream. Vegan cheese made of cashews or macadamia nuts can be replaced by dairy cheese for cheese-lovers.

Remember to use other seasonings when you want your dishes to stand out. Spices, vinegars, citrus juices and herbs can all be used to flavor food so they have a unique flavor, regardless of whether they contain dairy. If you are able to remember the basic principles of the ketogenic diet and find tasty ways to avoid dairy, you will be able maintain a successful ketogenic plan.


Can I eat a keto vegetarian diet?

It all comes down to understanding the principles of a vegetarian keto lifestyle and how it works. It's not as complicated as it seems; a vegetarian keto diet involves cutting out all animal products from your diet and finding plant-based foods with low carbohydrates but high fats.

You must monitor your macronutrients when eating vegan keto. This means that you should be watching the amounts of carbohydrates and proteins in each meal. Protein should be reduced, while fat should be increased. You want to decrease the amount of carbohydrates you consume to get your body to a healthy metabolic state, known as nutritional ketosis. This will result in your body burning fat for energy instead of glucose.

Apart from monitoring carbohydrate intake and calculating macros, you will also need to pay attention to whole foods rich in nutrients like avocados, nuts, seeds, leafy greens, olive oil, and healthy unsaturated oil like coconut oil. Vitamin B12 is another important component of any vegan ketogenic lifestyle. Many people lack this essential vitamin due to poor diets.

This pushes our bodies into a biochemical state known as nutritional ketosis - basically using fat as our energy source instead of sugar or glucose. It may be difficult initially to adhere to this strict carb limit, but you will eventually get used to it.

The ketogenic diet is good for internal and external health. However, it's important to maintain high nutritional quality.

Keto can be sustainably balanced with adequate nutrient intake. For maximum benefits, ensure that you only eat real whole foods. Don't underestimate the value of portions. Common Mistakes to Avoid on a Ketogenic Diet

To ensure success with a ketogenic diet, it is important to do so correctly. People still make common mistakes on their ketogenic journey. These can adversely affect their progress.

Paying attention to the types of food and how much you eat is essential. Eating too much fat or making bad carb choices can lower ketone production and cause weight gain. You should monitor the amount of carbohydrate, fat, and proteins you consume for each meal.

Accidentally eating hidden carbs could really hamper your efforts. Hidden carbs can lurk in foods like parmesan cheese, processed meats, and other seemingly innocent food items. Make sure to check labels. Also, be wary when eating out, as restaurant meals often exceed recommended carb limits due to added sauces or starches like rice or potatoes.

Not drinking enough water can also hinder success on a keto-friendly diet. The body needs to have plenty of fluids in ketosis. This is especially true during the transition phase. Failure to follow this simple rule could cause negative side effects like headaches and fatigue.
