1) Introduce Yourself.

Jay Horley is my name. I have been a type one diabetic for 16 years. My story is a struggle to achieve peak athletic performance. Over time, my health declined until I became depressed and had 12 or more nutrient deficiencies.

2) What did you eat prior to Carnivore?

In my late teens, I was eating a typical American diet. I was also taking a lot of medication and insulin to compensate for the amount of junk food I was consuming. My diet gradually changed as I became more health conscious. It was a fruit and vegetable heavy paleo diet. Everyone says they are healthy, right?

Why did you first try Carnivore?

My health reached a low point in mid-2018. My doctor told me that I had all the conditions listed above and was clearly on the path of intestinal cancer. I started searching for answers, because I thought that I was doing all the right things. I started by removing nightshades and using Low Fodmap. I continued this for 6 months, but had done far too much damage. Then, I found the solution. A friend of mine introduced to me a few Carnivore Resources. One in particular was 'The Hypercarnivore Diet' by Don Matez. This book immediately blew my mind, and I removed all plant products from my home.
As I was finishing the book, Shawn Baker began promoting World Carnivore Month. I went all in and announced on social media that I would be eating 4 steaks per day for 31 consecutive days, 124 steaks in a straight line. I also filmed them all in my Instagram Stories to ensure accountability.

4) What is your personal approach to the Carnivore Diet?

At first, only ribeye and strip loin steaks were available. This lasted for a few weeks. In the past 10-11 months I have tried different meats like chicken, lamb, salmon etc. I tend to stick with beef, and I like the fattiest cuts such as short rib. What are the benefits you have seen since beginning your Carnivore Diet?

My health and happiness have been completely transformed. Directly, I am no longer depressed or sick. My blood tests are all significantly better, and my nutritional deficiencies and infection have disappeared. My nose is actually working again. I have no bloating, and my digestion is much improved.
Outside of my health, I have been lucky to connect with other carnivores and type 1 diabetes patients who have reached me.

6) Have you noticed any negative effects of the Carnivore Diet?

Only those I make for myself. I'm annoyed by vegan propaganda, and when people tell me that my diet will be bad for me. But I've also learned to let my results speak for themselves and not get involved in social media arguments.

7) How do you exercise when you are on the Carnivore Diet?

I usually do 6 days of resistance training, Brazilian Jiu Jitsu, and other outdoor activities. Training is awesome! I had 12+ nutritional deficiencies, so I just filled those. However, from a diabetic perspective, blood sugar has become significantly more stable.

8) How would you advise someone who has been considering this diet but is not ready to make the jump?

What can go wrong in 30-90-days? You are probably curious because something isn't working for you. Otherwise, you wouldn't be considering any other diet. Do it. Your future self will thank you.

9) Will Carnivore ever be accepted by the mainstream?

It will take some time. It's impossible to have a top-down strategy with the amount of money and food companies available. Everyone needs to work together and support one another.
