1) Tell us about yourself.

I am Huw Davies. I live in London and have two children as well as a dog. I have been a parent almost full-time for the past 12 years, and still maintain a low-level of coaching. I am a Level 3 Triathlon Coach and an ex-coach educator with Triathlon England. I did a run coaching cert many years ago, which is probably expired. I'm an ex-rugby player and men's lacrosse athlete, cricketer, squasher, triathlete.


2) What did you eat prior to Carnivore?

As a student with idealistic views, I became vegetarian. Later, I lived with vegans and practiced being vegan for a brief time. Thank God, living in France and Spain made me a vegetarian. When I started triathlon in my 30s I began eating a diet high in carbs and calories, with a lot of toilet visits. When I became a coach, I learned about the dangers that grains can cause. I gradually changed my diet to low-carbohydrate, paleo, keto, relaxed carnivore and now a strict carnivore. Over the course of my forties, I made these changes. I am slow to change my habits.


Why did you first try Carnivore?

It was a step forward, but also an evolution, because I wanted to keep improving. It went LCHF (low carb high fat), paleo, keto and carnivore. Each step brought me closer to my ideal WOE. In contrast, I had a MCL injury at my knee that I re-injured. This caused my knees to swell to the size if a grapefruit when I was provoked. One day during my keto phase I said, "F**k it! I'm giving up all carbs. I want to be able to see my leg again." It was early 2017, and I've been doing well ever since.


4) What is your personal approach to the Carnivore Diet?

Simple. I am not perfect but I stick to a small range of items every day: bacon, eggs, steak mince from the butcher. At the moment, I'm eating a lot butter and Lo-salt. When I have the money, I buy ribeyes in large quantities and eat a few a day. The best flavor for me is rib-eye. I gave up coffee and tea which, I believe, helped a lot. I also drink very little, maybe one glass of wine a month, which, in my opinion, is also good. I usually eat two meals a day at 11 am and 7 pm. This is perfectly fine. Today, I was hungry around 10am, so I ate then. I have learned to not clock-watch as I used to when I did intermittent fasting. Oh, I cannot eat until the minute-hand reaches 12.


What are the benefits you have seen since beginning your Carnivore Diet?

I had chronic back pain since a bad injury aged 18 - that has gone - and constant neck pain from about the age of 30. At times, it was so bad I considered contemplating suicide (!) Since a bad back injury at age 18, I have had no pain. I also experienced constant neck pain, which was so severe that I considered suicide. This is no longer the case. No mood swings or grumpiness. (My kids may not agree with me on the grumpiness!) I have a better body composition and more muscle than before when I was (a pretty decent) triathlete. The brain fog I lost when I went keto. I can't ascribe the mental clarity I have to being a carnivore.


What are the negatives of the Carnivore Diet?

I drink a lot of water. I think it's because I eat a lot of meat and salt. I have to get up twice at night to use the toilet. What people will think when they learn that I only eat beef. Everyone becomes an expert in nutrition and starts warning you about, um, constipation, gout and arteries. It can be tiresome. It's worth it.


7) Do You Exercise on the Carnivore Diet? If so, how do you go about it and what are you doing?

I've been training hard since I was a child. I played sports and/or ran races all my life. Today I train twice daily: an intense kettlebell workout in the morning and a strength training session in afternoon. I love training, I love kettlebells and I have no desire to swim or bike. I walk with my dog about six miles per day. One day I would love to take her on a multiday hike.


What advice would you offer to someone who has been considering this diet but isn't ready to make the jump?

Just go for it and try it - you have nothing to lose but a lot of fat, a lot of bad moods and a bunch of bad skin. You have to give it a 60-day try. Be patient, persistent, and focus on the process and not your imagined goal.


9) Do You Think Carnivore Diet Will Ever Be Accepted As A Mainstream Diet?

Unlikely. Carnivore will not be mainstream as long as there is a strong anti-meat message being pushed by powerful, influential, and evil people. They are funding veganism, manipulating narratives, pushing the story in the media, making films like The Game-Changers and promoting it. I do predict it will become more mainstream and less marginalized.
