Keto Pecan Shortbread Cookies

Keto Pecan Shortbread cookies are a dream come true. It's easy to make and very low in carbs. But be careful! It may be difficult to stop eating once you get started!

Who doesn't love a good cookie? This recipe is a nice change from my usual richer recipes that usually involve one of my favorite foods, chocolate. This is a light, sweet treat that has a little crunch.

The recipe is delicious, especially around the holidays. I like the taste of the buttery flavor. I also think that the almond extract completes the flavor.

What ingredients do I need to make Keto Pecan Shortbread Cookies?

Ingredients are easy to find! You can check out the complete list if you want to be sure you have all of the ingredients before starting!

  • Almond Flour
  • Coconut Flour
  • Granular Erythritol
  • Butter
  • Vanilla Extract
  • Almond Extract
  • Cream Cheese
  • Eggs

Recipe Notes

The combination of almond flour and coconut powder is crucial to a good batter. The final product doesn't have a coconut flavor.

The almond extract is a wonderful addition to any recipe. I can't describe the flavor it brings, but i love it. Don't skip it!

Be sure to allow enough time for the dough to cool before baking. This will help to prevent the cookies from melting and becoming flat discs.

Ingredients

  • 1 Cup Blanched Finely Grounded Almond Flour
  • Coconut Flour 2 Tablespoons
  • Half a cup of Granular Erythritol
  • 12 Cup Butter, Softened
  • Half a teaspoon of Vanilla Extract
  • Half a teaspoon of Almond extract
  • 1 Ounce Softened Cream Cheese
  • One Large Egg
  • Half a cup chopped pecans

Instructions

  1. Mix the almond flour with coconut flour in a large bowl. Mix the cream cheese with erythritol in a medium-sized bowl. Add butter, vanilla, almond and almond extract.
  2. Mix the wet and dry ingredients together. Mix in the egg. Fold in the pecans.
  3. Pour the mixture onto a large piece of parchment and shape it into a log measuring 9 inches long. Roll the dough in the parchment, and then twist the ends together to seal. Place the roll in the refrigerator to chill for 1 hour.
  4. Pre-heat the oven to 350 degrees. Place the 18 cookies on a large baking sheet lined with parchment paper. Slice up the chilled roll. Bake 12-15 minutes, or until edges are golden brown. Allow them to cool down for 15 minutes to allow the firmness to develop.
