Shrimp Stir-Fry on Shirataki Noodles

I have been using the shirataki opaque noodles occasionally (made from konjac tuber) and I find the noodles that contain oat fiber to be much more enjoyable than the translucent. My noodles must be opaque. Although they look like flour-based pasta, the tofu and shirataki noodles are not. They are quite bland by themselves. They will take on the flavor of any sauce or food you add to them. That's fine with me. They are not only filling, but they also allow me to eat noodles (a tabu food that low-carbers can have) while on my low-carb journey.

This dish can be eaten on shirataki noodles. It is safe for all phases of Atkins, provided that those on Atkins Induction do not eat the sherry/wine.

My husband gave this dish a two-star rating. My husband gets so excited about a recipe that I want to share it with you. It's easy to make and takes only 10 minutes.

INGREDIENTS:

24 medium shrimp, peeled & deveined

2 8-oz. Packages of tofu Shirataki noodles, Konjac noodles

1 1/2 T. coconut oil

2 oz. 2 oz.

2 oz. 2 oz.

1 large jalapeno seeded and sliced into thin strips

1 clove garlic, minced

1/4 tsp. Ginger root, chopped and peeled

1 T. sherry, white wine (omit if you are on Induction).

1 T. low-sodium soy sauce

Toast sesame seeds or pinch black

1 cup chicken broth (homemade), or 1 cube in 1 cup water

1/8 tsp. xanthan gum

OPTIONAL: Sambal Oelek chili sauce to your liking.

DIRECTIONS To get rid of the fishy smell, rinse the noodles in hot water for 3-4 minutes. Use paper towels to drain the noodles. After rinsing, the shrimp topping will eliminate any lingering odors. Set aside. All the vegetables should be prepared and kept close to the stove. In the boiling water, add the bouillon cube. Add the soy sauce, garlic, and ginger. In a nonstick skillet or wok, heat coconut oil. Stir fry the red pepper, onion, and jalapeno until they are tender. Stir-fry the shrimp with and until they become opaque and curling. In a pan, pour the chicken bouillon mixture and cook for 1-2 minutes. Stir in the xanthan gum and continue to stir the mixture. Half of the noodles should be placed on each of the two dinner plates. Dip half the shrimp mixture over the noodles. Serve with a green salad
