Super Simple 5 Ingredient Keto Lemon Bars

These keto-approved Lemon Bars are made with only 5 ingredients, most of which are already in your kitchen. They are easy to make and delicious.

You may crave a rich, heavy dessert like chocolate cake or ice-cream at times and something lighter when you are in the mood. Lemon bars are a delicious way to use any lemons you have lying around. The contrast between the sweet crust and the slightly tangy lemon filling is worth tasting!

Our keto-friendly crust has the same flavor as a traditional shortbread or pastry, but is much lower in carbohydrates. The addition of erythritol to replace sugar blends beautifully with the richness and flavor of salted butter. This provides a wonderful base for the lemon topping.

Bake the mixture after combining all the ingredients. This will allow the eggs to set and bind it well. You can top the bars with berries, erythritol or lemon zest. To enjoy the freshness and flavor of the lemons you can keep the bars in the refrigerator until just before serving.

Makes 8 servings with 5 ingredients Keto Lemon Bars

Preparation

Crust:

  • 1 cup Almond flour
  • 1/4 cup Erythritol
  • 1/2 cup Butter

Lemon filling:

  • 3 medium Lemons Juice and zest
  • 3/4 cup erythritol, powdered
  • 1/4 cup almond meal
  • 3 large eggs
  • Use pinch of salt

The Execution

1. Heat the oven to 350F. All ingredients should be gathered and prepared. Use a spice mill or food processor to powder the erythritol for the filling. Lemons should be zest and juiced.

2. Mix almond flour, butter, and erythritol together to make the crust.

3. Pour the mixture into a ramekin or casserole dish lined with parchment paper and smooth the surface. Bake for 15-20 minutes, or until golden brown.

4. While the crust is cooling, begin the filling. Mix together the almond flour, lemon zest and juice, powdered Erythritol (erythritol), eggs, and powdered erythritol. Mix until smooth.

5. Pour the lemon filling on the crust that has been semi-cooled and bake for 15 to 20 minutes. The middle should still be jiggly, but the top should be completely set. It will crack if you overbake.

6. The bars should be placed in the fridge for 3 to 5 hours, until they are completely cooled and firmed up. Dust with optional additional powdered Erythritol, and enjoy!
