This is an oldie, but a goodie. I've not made it in years and now I want Mexican food. This is a quick and tasty meal that I will make tonight. Who needs the high-carb cornmeal tops of tamale pie? Walmart's Great Value canned corn has only 9g carbs in a 1/2 cup, minus 2g fibre or 7 net carbs. If you want to use a half-can (3/4 c.), spread out over an entire recipe, then this is the way to go. See the numbers below. This dish is so delicious I love to serve it occasionally.
If you leave out the corn, this recipe will only work during Atkins Induction. If it meets your daily macros, then you can use this recipe for any phase of Atkins. Tamale Pie is my recipe for those in Maintenance Phase who can afford to eat a few extra carbs.
INGREDIENTS:
1 lb. Ground beef, lean
2 oz. 2 oz.
Chop 1 jalapeno with seeds.
1/2 tsp. chili powder
1 tsp. Ground cumin
1/2 tsp. Garlic powder or granulated garlic
No-salt 3/4 c. corn canned, drained
2.25 oz. Can sliced black olives
American Deluxe Cheese, 4 Slices
1/3 cup shredded cheddar cheese
Half a c. diced tomatoes in a can (without salt)
DIRECTIONS Pre-heat oven to 300o. Cook the ground meat on medium heat, until it is no longer pink. Add onion and Jalapeno, and cook until the onion softens. Stir in all the spices. Add the tomatoes, corn kernels, olives, and shredded Cheddar. Stir and simmer 4-5 minutes. The mixture will start to bind a little as the cheese becomes sticky. Add the four slices of American Cheese. Put the pan in a oven at 300o for 5 to 8 minutes, just to melt cheese. Serve in the pan directly or on a platter. This dish pairs well with your favorite green salad or guacamole.
