Mushroom Risotto

Mushroom Risotto is always a hit. This mushroom risotto is creamy, comforting and full of umami flavors. It's the perfect comfort food to serve at any event.

Years ago, I made a lot mushroom risotto. It was at this time that my husband and I began to learn what marriage and compromise meant. We were not yet newlyweds but we still had a lot to learn. My "take a break" recipe was mushroom risotto. When we disagreed or argued, I would make this dish.

Slowly stirring the rice, watching it transform into a cohesive, creamy meal with rich, meaty mushroom, gave me the time to cool down and see our conversation from a new perspective. Making mushroom risotto was calming, and that may be the reason why it is considered comfort food.

We stand together in the kitchen now that we're older and more forgiving. He'll make a side dish, like this Lemon Parmesan Salad. It has crunchy lettuce and our kids love it. I'll stir the rice just as I have always done. On weekends, I'll usually make us a drink. I'll have a Limoncello Spritz, he will get a whiskey neat.

We can catch up with the news of the day in the time it takes to prepare this recipe. It's nice to have a quick dinner, but sometimes it takes time to make something special.

Ingredients for Mushroom Risotto

The end result of a mushroom risotto is worth all the patience and effort. It is important to use quality ingredients and to take the time to develop flavors and textures.

  • Chicken Stock:I prepare homemade chicken stock every month. It's an easy way to make the most of a roast chicken, and I like the taste. But store-bought stock will also work.
  • Olive Oil:Olive oils are liquid gold here. I used our Italian Nocellara variety which has a slightly spicier finish to try and evoke the tastes of Italy.
  • Onion: The yellow onion is the most popular in the kitchen. However, white onions can also be used. Red onions will also work, but when they are cooked, they become gray.
  • Cremini Mushrooms:I can easily pick up cremini mushroom at the supermarket, but portobellos or white button mushrooms will also work. If you want to be fancy, a mix of exotic mushrooms such as shiitakes, morels, or chanterelles will taste great.
  • Thyme and fresh rosemary: Woody herb like rosemary and thyme is my favorite ingredient to pair with mushrooms. They enhance the earthy taste of mushrooms. This trio brings out the best of each other. You can also use dried herbs if you don't want to buy fresh.
  • Black pepper freshly ground and salt: The flavor of salt is like lipstick on lips. Salt is the only thing that makes a recipe stand out. You have all the ingredients already. Pepper, well pepper is that delicious, subtle heat that we all love.
  • Garlic Cloves The mild spice of garlic is a perfect match for the sweetness of onions, the earthy flavors from mushrooms and herbs. Five cloves of fresh garlic may seem like a lot but they make the mushrooms sing.
  • Balsamic Vinegar:This sweet and acidic vinegar adds the perfect amount of sweetness to the mushrooms, making them stand out from the risotto.
  • Arborio rice or carnaroli:Arborio can be found in many well-stocked supermarkets. It's not as starchy as some other varieties of rice used to make risotto but is still a good middle-of-the road rice that's easy to find. Carnaroli rice is the best risotto you can get, but it's hard to find. You will have to order online or go to a specialty store to locate it.
  • Parmesan:Most people believe that risotto contains milk or heavy cream, but it only has cheese. The starch in rice and a small amount of parmesan grated finely are responsible for the creamy texture. I buy the parmesan blocks and use a microplane zester to grate the cheese myself. The result is a light, fluffy cheese that melts into the rice.
  • Fresh Parsley for garnish (optional). A little green never hurts. If you happen to have some parsley, chop it up and sprinkle over the mushroom-risotto right before serving. Don't worry if you are out.

Mushroom Risotto Recipe

Start with warm stock when making risotto. Warm stock releases the starch in the rice, resulting the creamy texture and consistency you are aiming for.

  • Warm up the stock: Place a small saucepan over medium-low heat and add the broth. While you prepare the rest of the ingredients, let it warm up. It shouldn't boil. Keep it warm, just below a simmer.
  • Sauté the mushrooms : Place a large skillet on medium-high heat. Add 2 tablespoons olive oil to the pan. Add the onion dice once the oil starts to shimmer. Stir frequently with the wooden spoon and cook until the onions start to soften. Add the chopped mushrooms, thyme and rosemary. Season with freshly ground pepper. Stir to coat, and cook for 8 minutes while stirring. The mushroom should take on color. Add the garlic, and balsamic vinegar. Stir, and cook for an additional minute. The mushrooms will shrink, soften and darken in color. Transfer to a plate.
  • Make the risotto: Return the skillet to the stove and set over medium heat. Add 1 tablespoon of olive oil. Once it shimmers add the rice and stir for about 30 seconds to 1 minute. Ladle about 3/4 cup of warm stock into the pan with the rice and stir. Reduce the heat to medium. Let all of the liquid absorb and plump the rice before adding more stock. Add 1/2 teaspoon of salt along with an additional 3/4 cup of stock. Stir regularly while the stock absorbs. Keep adding stock a little at a time, stirring continuously until all of the stock has been used up, and the rice is creamy and al dente, this process will take about 25 minutes. When ready, the stock should be mostly absorbed, but the rice should still look wet, and creamy. You don't want risotto to look like wet clumpy rice.
  • Finish and Serve: Remove from heat. Stir in the parmesan cheese. Fold the mushrooms into the risotto (save a few mushrooms to garnish individual servings if you're feeling fancy). Remove the thyme stems. Taste and adjust salt and pepper to your liking. Divide into 4 warmed bowls, top with more fresh herbs and a drizzle of balsamic vinegar if you want to and serve!

Ways to Make this Recipe Your Own

Once you get the foundational elements of making risotto down (stirring rice with warm stock until it's thick and creamy) you can add anything to dress it up.

  • Skip the mushroom step and instead make Easy Sauteed Shrimp. When it's ready, add it to the risotto at the end to create shrimp risotto.
  • If you have asparagus lying around, swap out the mushrooms for asparagus or even with them for a lovely spring asparagus risotto dish.
  • If it's fall and the weather is cooling down, add a little sage along with the rosemary and thyme and swap the mushrooms for butternut squash to make a lovely butternut squash risotto.

What to Serve With Mushroom Risotto

Risotto is a traditional Italian dish typically served as a main course, but it can also be used as an appetizer or side.

When it comes to a comfort food mushroom risotto recipe like this one, I tend to eat it as a main with little else. However, if I want to boost my veggie intake for the day I will start with a simple salad like the Lemon Parmesan Salad.

If it's a holiday or we are having a nice dinner with friends. I will likely serve this mushroom risotto alongside Pan Seared Pork Chops for meat-eating friends or I may create a vegetarian feast and serve it with Eggplant Parmesan. Go with whatever suits your fancy! I've even reheated it for breakfast and topped it with a poached egg.

Ingredients

  • 6 cups low sodium chicken stock, store bought or homemade
  • 3 tablespoons extra virgin olive oil
  • 1 small yellow onion, diced
  • 1 pound cremini mushrooms, sliced
  • 4 small fresh thyme sprigs (or 1/2 teaspoon dried thyme)
  • 1 teaspoon chopped fresh rosemary
  • Freshly ground black pepper
  • 1 teaspoon salt
  • 5 garlic cloves, minced
  • 1 1/2 teaspoons balsamic vinegar
  • 1 1/2 cups arborio or carnaroli rice
  • 1/2 to 3/4 cup shredded parmesan cheese
  • Minced fresh parsley, for garnish (optional)

Instructions

  • Warm the stock: Set a small pan over medium low heat and add the stock. Let it warm while you prepare the other ingredients. You don't want it to boil. Just keep it warm--just below a simmer is perfect.
