Saganaki (Fried Greek Cheese)

Saganaki, a popular Greek appetizer consisting of pan-seared Greek Cheese served with lemon wedges. The outside is crispy and the inside is beautifully melted. This traditional Greek dish is perfect to serve as a starter at the start of your meal.

Saganaki is the star of many Greek restaurants. It arrives to your table while still hot from the skillet. Just before serving, the server will light the saganaki on fire with ouzo. The name "flaming Greek Saganaki" comes from this last step of its presentation.

This saganaki is surprisingly simple to make, but the tableside show is optional. This festive dish, the savory version our beloved feta honey and sesame, will quickly become a top request at dinner parties. You may want to make both if you like melted Greek cheese.

What is Saganaki

The Greek word "saganaki" refers both to the method of cooking and the pan. The dish is prepared in a shallow, heavy bottomed, two-handled frying pan, called "saganaki", in Greek.

Other traditional Greek dishes can be cooked in the same skillet. These include mussels saganaki and shrimp saganaki. Both are . This simple, delicious, and easy to make fried appetizer is known as cheese saganaki .

Ingredients in this Saganaki recipe

This recipe for saganaki is easy to prepare because it only has a few ingredients. You only need a good block of semi-hard cheese and a few other ingredients: olive oil, lemon, flour.

  • Cheese Kefalotyri or Graviera is the preferred Greek cheese for this recipe. If you don't have access to these cheeses, you can use authentic Greek kasseri or feta. Keep an eye on it as the cheese will melt faster.
  • Oil:Use high-quality extra virgin olive oils, such as our Greek Koroneiki oil, when pan-frying. Avoid using vegetable seed oils as they will alter the taste.
  • Black pepper ground: Since the cheese is already salted, we only season the flour with pepper.
  • FlourStandard All-Purpose flour coats cheese to allow it to become golden brown and crisp without falling apart.
  • Lemon : Squeezed fresh lemon wedges over the cheese, which is melting, gives it a balance of bright, savory and creamy.
  • Spirit: Use brandy or ouzo for the traditional flambe.

How to choose the right Saganaki cheese

It is important to choose the right type of cheese for a delicious Greek saganaki. It must be firm enough to withstand heat but not too hard to prevent melting. It is important to ensure that the cheese you use is cut into slices of 1/2 inch thickness.

Traditionally, saganaki is made with semi-hard Greek cheeses. They are usually made of sheep's dairy, like kefalotyri or graviera. Kasseri, feta or other cheeses can be used. However, they will melt very quickly and you'll need to watch them closely as they cook. Most of these cheeses should be available at Greek or Mediterranean markets.

If you can't find these cheeses, try alternatives that have similar textures and mild, nutty flavors. You could use a young Pecorino, or a nice Provolone. This recipe also works with the Cypriot Halloumi cheese, which is saltier than Greek cheeses.

How to Make Fried Greek Cheese

Saganaki can be done in a few easy steps. Follow these simple steps to make Saganaki.

  • Prepare the cheese. Slice a block of (cold), 8 ounces cheese into two pieces 1/2 inch wide. Run it briefly under water at room temperature and pat it dry.
  • Cover the cheese with flour. Spread the all-purpose flour on a plate with a rim and sprinkle black pepper. Each half should be dredged in the mixture of flour and black pepper, scrubbing off any excess.
  • Pan-fry your cheese. Pour 1/4 cup olive oil into a medium nonstick pan. Set over medium heat. Pan-sear cheese slices in hot oil (but without smoking) until golden brown on both sides. This should take about 2 minutes. The cheese should have a thin, crispy crust and a soft interior.
  • Serve immediately: Squeeze some lemon juice on the fried Greek cheese. Or, you can flambe it with brandy or ouzo. (See instructions below).

How To Flambe Chedder (Optional).

You can flame the cheese for a dramatic presentation. Once your cheese saganaki has been prepared, this is a great way to entertain your guests.

  • Add the alcohol. First, remove the skillet from the heat (and keep it away from you) to safely flambe. Pour half a shotglass (about 1/2 ounces) of brandy, ouzo or gin into the skillet.
  • Ignite! Use a long match or BBQ lighter to ignite the alcohol. Once the "oohs and "aahs", and alcohol has burned off, squeeze in some fresh lemon juice.

Must I Flambee Saganaki

Do not worry if you do not want to set your pan on flames. Most Greek homes, as well as Greek restaurants, serve cheese saganaki without flames. All you need is a squeeze of lemon to add a little extra.

It is unlikely that the flaming version saganaki cheese originated in Greece as commonly believed. This is a Greek-American tradition that originated in Chicago. The additional showmanship has spread around the world and can now be seen in many touristy tavernas, including Greece.

It's a great way to start a party, whether it's traditional or not. Try it!

Greek Cheese Saganaki

Saganaki, a popular Greek appetizer, is easy to prepare at home. Fry the cheese until golden brown and melty, and serve it with a squeezed lemon. You can also treat your guests with a tableside flambe (which is totally optional).

Ingredients

  • 1 Block semi-hard cheese such as kefalotyri (seen note), graviera or pecorino (8 ounces)
  • All purpose flour, for coating
  • Freshly Ground Black Pepper
  • 1/4 cup extra virgin olive oil
  • 1 small lemon, cut into wedges
  • 1/2 ounce brandy or ouzo, to flambe (optional)

Instructions

  • Prepare the cheese. Slice the cheese with a sharp knife into two slices of 1/2 inch thickness. Each slice should be rinsed with water at room temperature, and then lightly blotted dry. This will help the cheese to adhere better to the flour. )
  • Cover the cheese with flour. Sprinkle black pepper on the flour and spread it onto a plate with a rim. Then, coat the cheese pieces with flour.
  • Fry the cheese. Heat the olive oils in a nonstick pan over medium heat. Once the oil is hot, but not smoking, carefully place the slices in the pan. The cheese should be fried for a few minutes until it turns golden brown. Reduce the heat a little so that it doesn't brown too quickly. Flip the cheese over and sear the other side until it is golden brown.
  • Finish and serve. Serve the cheese immediately by squeezing some lemon juice on top. To flambe cheese, remove the pan from the heat. Pour the brandy in the pan and ignite it carefully. After the alcohol has burned off, squeeze lemon juice over top and enjoy.

Notes

  • If you use feta, it will cook faster. Keep an eye on the cheese and remove it from the heat when it turns golden brown.
  • Instead of buying a wedge, try to purchase a block (about 4x4 inches). You can then cut the block into two slices of equal thickness. The cheesemonger can cut it for you in two slices, each of 4 ounces and 1/2 inch thick. You can divide each slice into four triangles to make four individual servings.
