Gluten Free Orange Almond Flour Cake
Equipment
- Measuring Utensils
- Food Processor
- 9 Inch Springform Pan
Ingredients
- 2 small oranges, 6.5 ounces each
- 4 large eggs
- ¾ cup honey
- 2 cups blanched almond flour (not almond meal)
- ½ teaspoon celtic sea salt
- 1 teaspoon baking soda
Instructions
- Wash the oranges and boil them whole (peel and all) for 1½ hours, or until soft
- Place whole oranges (peel and all) in a food processor and blend until smooth
- Pulse in eggs, honey, almond flour, salt, and baking soda until well combined
- Pour batter into a greased 9 inch springform pan
- Bake at 375°F for 35-45 minutes, until a toothpick stuck in the center comes out clean
- Cool in the pan for 2 hours
- Serve

I first came upon an orange almond cake recipe in the 1990s in one of Claudia Roden’s cookbooks, The Book of Jewish Food.
Roden is a British cookbook author, food scholar, and cultural anthropologist. She is also one of my heroes.
According to Roden, orange almond cake is a traditional Sephardic recipe commonly served at Passover.

As an aside, all of my dessert recipes are Kosher for Passover since they are free of chametz!

It seems weird to make a cake with whole oranges.
However, using the orange with its peel is what makes my orange cake with almond flour moist and totally unique.
Yes, as I mentioned, use the entire orange, including the peel! Make sure your oranges are fresh and sweet so the cake is fresh and flavorful.

You can make this cake recipe ahead of time, that’s what I do when we’re entertaining.
If I’m having people over for Shabbat dinner, I make the cake Wednesday, let it cool on the counter overnight, then wrap it and store it in the fridge until Friday.

This paleo cake recipe would be incredible with lemons, though many adjustments would need to be made since lemons are smaller than oranges, not as sweet, and far more bitter.
I tested this orange cake recipe a couple of dozen times to perfect it so I’m not sure how substitutions would work in order to create a recipe for lemon cake.
I wish I had a crystal ball, it would make the process so much easier! If you do experiment with lemons leave a comment and let us know if it works.

Paleo is there any way to eat cheese?
Cheese temptations can sometimes be too tempting to resist if you aren't paying attention. But is it allowed on Paleo? Here are the facts: Although there is no definitive rule, cheese was traditionally not included in Paleolithic food due to its dairy contents.
A moderate amount of good quality cheese may be sufficient if dairy avoidance is not your top priority. It all depends on your specific dietary needs and goals and how you react to certain food items.
For example, certain individuals may be lactose intolerance and should avoid dairy products. They should also not consume dairy products in large quantities or infrequently. Others can tolerate moderate amounts of sheep's or goat's milk byproducts, provided they aren't allergic to lactose.
There are many vegan options available for those who want to enjoy cheese in a more paleo-friendly manner without the use of cow's milk. These foods allow vegans to enjoy some cheese without having to compromise their values or preferences.
Can I eat as much fruit as I want on paleo?
Nocturnal munchers may be surprised to hear that they won't find any processed snacks on a paleo diet. It focuses instead on whole foods that our ancestors would eat: fruits, vegetables and nuts.
But how much fruit can you eat? The answer depends on each individual's nutritional requirements. Although the Paleo diet doesn’t restrict the amount of fruits you can eat it is important to keep in mind that high sugar intake can lead to several health issues like weight gain and changes in blood sugar.
For extra nutrients and fibre, we recommend eating 1-2 servings per day of fresh fruit (1/2 cup to 1 Cup depending on the fruit) or frozen/dried fruits. But no more that two tablespoons at one time. Choose fiber-rich fruits like pears, berries and melons to fill your belly. These can be added to smoothies, salads, or used as toppings for snacks with nut butter or greek ghee when you feel the need.
Additionally, add low-sugar options like avocados or olives, which are also high in healthy fats; these two groups will make up the bulk of your diet while excluding refined starches and high-sugar fruits.
Paleo is all about moderation and incorporating other nutrients. Paleo encourages you to indulge in delicious ripe fruits. After all, don't forget to enjoy your food too!
Can you eat popcorn on a Paleo diet
It's crucial to understand the Paleo diet and make informed choices about which snacks and meals are best suited for the plan. Popcorn is a common food that can be tricky to include. Can you eat Popcorn on the Paleo Diet?
The simple answer is: although it's made from corn (a vegetable that doesn’t comply with Paleo guidelines), it isn’t inherently unhealthy. Because of its high carb content, traditional popcorn should not be eaten if you strictly follow a Paleo diet.
That said, some alternatives are allowed in this style of eating plan. Coconut milk popsicles, for example, can satisfy your desire for salty and crunchy treats without impacting your nutritional balance. You can also make your own snacks by making almond flour and cauliflower crackers.

Your body will detoxify more efficiently if you ensure adequate hydration during the day, and restful sleep at nights.
Your body may experience withdrawal symptoms like headaches and energy drops. If these symptoms persist, you should consult a doctor.
Get active by adding in some physical activity to your day, such as walking faster every morning or evening, or signing up for a class like aerobics or yoga. This will improve digestion, aid in weight loss, and help maintain overall health and well being.
You can also take this time to consider food intolerances and food sensitivities. Start experimenting with nutritious foods that you may never have considered before, such as kale, quinoa, or coconut oil, to broaden your nutritional knowledge base too!
