This show-stopping dessert is made with my Low-Carb Almond Flour Pie Crust, which encases cinnamon-spiced apple slices, as well as a few other healthy ingredients.

What is Apple Galette?

But back to le galette! What is this fancy dessert, by the way? A galette can be sweet or savory and rustic in appearance.

The French word "galet", which means "smooth flat pebble", indicates something round. I've made it a fruit-filled rectangular dessert.

Equipment

  • Parchment Paper
  • Medium Bowl
  • Baking Sheet

Ingredients

  • 1 Low Carb Almond Flour Pie Crust, chilled
  • 2 Apples (Gala and Braeburn), cored, peeled and cut into 1/8-inch thick slices
  • 1 tablespoon arrowroot powder
  • 1 teaspoon ground cinnamon
  • 2 tablespoons maple syrup
  • 1 tablespoon lemon juice
  • 1/8 teaspoon vanilla stevia

Instructions

  • Divide Paleo Pie Crust in half
  • Place half the dough on parchment paper
  • Make a rectangle log out of the dough
  • Cover with a second piece of parchment
  • Roll into a rectangular shape, 11 x 9 in., with 1/8-inch thickness
  • Remove the top parchment piece
  • In a large bowl, combine apples, arrowroot, maple syrup and lemon juice with stevia.
  • Apple slices arranged on dough rectangle
  • Wrap dough around apple layer using parchment paper.
  • Pour the juices in a bowl over the galette
  • Slide the galette and bottom parchment piece onto a baking sheet
  • Cover the baking sheet with tin-foil
  • Attach tinfoil around the edges of the baking sheet to prevent steam from escaping
  • Covered, bake at 350degF covered for 40 minutes and then 5-10 minutes longer uncovered
  • You can also serve

How to Make Apple Galette From Scratch

You can easily make my Low-Carb Apple Galette Filling with just six ingredients.

Almond Flour Gluten Free Pie Crust

Divide my Low-Carb Almond Flour Pie Crust into two halves and use one half as the low-carb pie crust in this recipe.

The other half can be saved for a later use. Wrap it in parchment and store it in the fridge.

When stored in this manner, my low-carb Almond Flour Pie Crust should last about five days.

Almond Flour Rustic Apple Galette Recipe

Rolling out the dough very thinly is key to a Low-Carb Apple Galette. Then, place the apple slices at the center.

Fold the crust inwards, like I did on the photo. To fold this, you can use parchment as a guide. The flaky dough will be able to move easier.

If you are wondering how to store apple galette, simply let it cool overnight and then wrap in tin-foil. You can keep it refrigerated for up to 5 days.

It's so easy to make apple galettes with my boys.

Both galettes and pies are pastry-based desserts which are baked with a filling. However, galettes require less effort than pies.

Rustic Apple Pie

We can also think of apple galette as a rustic apple pie made by the lazy baker, baked on a baking tray instead of a pie plate.

Galettes are a great alternative to pie. There is no need for crimping or blind baking.

It's possible to make a huge difference by making simple changes. Get rid of processed foods and packaged foods that are high in sugar, wheat or corn. Next, add fresh fruits and veggies to every meal and include lean meats as well as fish. Wild-caught fish is also an option.
