It can be difficult to convince your children to give up their candy for something healthier at Halloween. Almond Flour Chocolate Chips

Ingredients:

  • 2 cups of almond flour
  • 1/2 cup coconut oil, melted
  • 1/2 cup maple syrup or honey
  • 1 egg
  • 1 tsp vanilla extract
  • 1/2 tsp baking soda
  • 1/2 teaspoon of salt
  • 1/2 cup Dark Chocolate Chips

Instructions:

  1. Pre-heat your oven to 350degF. Line a baking tray with parchment paper.
  2. Combine almond flour, coconut oil melted, honey, maple syrup or vanilla extract in a large bowl. Add baking soda and salt.
  3. Fold the dark chocolate chips in.
  4. Place cookie dough on the baking sheet.
  5. Bake the cookies for 10-12 mins, or until they are golden brown.
  6. Allow the cookies to cool before eating.

No Bake Almond Butter Date Bars

Ingredients:

  • 1 cup pitted dates
  • 1/2 cup Almond Butter
  • 1/4 cup unsweetened coconut shredded
  • 1/4 cup chopped nut (e.g. almonds, walnuts or cashews)
  • 1/4 cup chocolate chips (optional).
  • 1/2 tsp vanilla extract
  • A pinch of salt

Instructions:

  1. Combine dates, almond butter (if using), shredded coconut, chopped nut, dark chocolate chips, vanilla extract and a pinch salt in a food processor. Pulse the mixture until it is well mixed.
  2. Line a 8x8 inch baking dish with parchment, leaving a little overhang at the sides.
  3. Spread the mixture evenly in the baking dish.
  4. Chill the bars in the fridge for a couple of hours, until they are firm.

Coconut Flour Pumpkin Muffins

Ingredients:

  • 1/2 cup Coconut Flour
  • 1/2 tsp baking soda
  • 1/4 teaspoon of salt
  • 1 tsp of ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 4 large eggs
  • 1/2 cup canned pureed pumpkin
  • 1/4 cup maple syrup or honey
  • 1/4 cup coconut oil, melted
  • 1 tsp vanilla extract

Instructions:

  • Pre-heat your oven to 350degF. Line a muffin pan with paper liners.
  • Combine coconut flour, baking powder, salt and spices in a large bowl.
  • In a separate bowl, combine eggs, pumpkin purée, honey or maple sugar, melted coconut oils, and vanilla extract.
  • Add the wet ingredients gradually to the dry ingredients and mix until well combined.
  • Divide batter evenly between the muffin cups.
  • Bake at 200°C for 20-25 mins, or until toothpick is clean.
  • Let the muffins cool down before serving.
